Summer Crunchies ... Not Munchies

While on the road these past couple weeks, I have been applying things I am learning in Nut Class. For one , I am a big fan of carbs, and I know these are my weakness. So I went to the local Publix store and bought lot's of fruits and veggies that I knew my pouch could handle .  So to substitue for my chips and such , here is what I did .  Water Melon - dipped in FAGE Yogurt  Peaches - cut into little dices over my salad .  Sugar Snap Peas - Dipped into Fage Yogurt- Mixed with Cumin and Red Pepper . Salt-Pepper.  Mango-Salsa on my Whole Wheat Chips . ( Hand Made from Pita Bread )  When ordering out , instead of choosing the rice - I opted always for the steamed veggie platter. Most time I cannot even get to it , but it sure makes me feel accountable that I took the stand against that white carb .  Just remember when it is hot , you will get more bang for your buck with items of fruits and veggies as most are water anyway .. and what do we need in the summer to keep us hydrated .. Yep... Water .  You can so train your taste to love these . I was never a big fan of tomatoes until  after I had weight loss surgery . Now I love them . I eat them almost everyday . My newest thing is my Spinach Salad , with Walnuts, Dates- Pecans and Warm Goat Cheese. I use a light champagne vinegrette ... OMG ---- so mouth friendly .  So what are you eating that deserves to be on the Summer Hit list ?  Take care and enjoy the day ,  Tink

Oh, you are so right.  I love the snap peas, slice red bell pepper and cucumber slices dipped in roasted red pepper hummas and apple slices with a bit of cinnamon raisin peanut butter. I came across these when I worked on my personal trainer certification and now that I'm finishing up my nutrition counselor course, I have learned so much more, too.

We need to have more posts like this with snacking ideas.  It's amazing to me how UN-imaginative I am, because half of this stuff I would never have considered putting together. For instance - I haven't touched a chip since surgery except for a sample of protein chips.  I would love to come up with my own version of a chip.  What do you do with the pita bread?  bake it?  Do you put anything on it prior to making it crispy?  I appreciate your help and ideas!

I do like some soy crisps when I am in a crunchie mood.  We are also big on cucumbers.  We cut them up, soak them in some italian dressing or dip then in a dressing flavor of choice.  Been really playing with veggies, trying out some grill choices.  Yellow squash, zuchinni, tomato, green pepper, onion mixed several different ways (1. wet italian dressing & a bit of the dry italian dressing, 2. lemon pepper, sea salt & garlic).  We are also really big on fresh fruit.  I love my bananas.  In the summer we like to get cantalope, strawberries, watermelon, and pineapple, a lot of times we get several different ones at a time, cut them up, & mix them in baggies for a fruit medley.

Good am Natalie & others, I absolutely love great snacking ideas! Now with our garden we've got a little bit of everything growing and have gotten lots of squash and zucchini already and are awaiting snaps, bell peppers, maters and cucs. I love mixing these together and making a salad sans the greeage at times. I also really enjoy turkey pepperoni and cheese cubes. When ordering out anywhere I usually try to order with someone or doctor up my meal MY way and ALWAYS ALWAYS ALWAYS ask for a To Go Box and box up 1/3 my meal unless it is something I just won't reheat to heat. For example, fish if I'm eating it at a restaurant I will NOT take it home with me. Same with chicken and a few other things. I'm not a "crunchie" girl per say but I really enjoy eating crisp/fresh veggies when I get that way. I love to mix them up and I really enjoy eating them plain and sometimes in vinegar or fat free ranch. I am really enjoying Raspberry Vinaigrette too. Just not much of a condiments gal. Enjoy!
