Sugar Free Texas Sheet Cake
So, we had a christmas party at work the other day and someone brought in a Texas Sheet cake. OMG was that tempting. That is my absolute favorite dessert of all time. I didn't give in and sample it because sugar really has a bad effect on me. So I pulled up a regular receipe online and modified it as much as I could to make it sugar free. I made the modified receipe last night and it was great. So now I'm passing it on to share.
TEXAS SHEET CAKE
2 cups flour
2 cups splenda
2 cubes butter
1 cup water
1/4 cup cocoa (unsweetened and sugar free)
1/2 cup sour cream
2 eggs
1 tsp. baking soda
2 tbs. sugar-free vanilla flavoring (same thing I use in coffee)
Mix Together
Pour in cookie sheet with sides (jelly roll pan). Bake @ 400 degrees for 20 minutes.
Icing for Texas Sheet Cake
1/4 cup cocoa (unsweetened and sugar free) (more or less to taste)
1/2 cup mulk (start with slightly less)
1 cube butter
Cook these three ingredients together until bubbly:
Add:
4 cups splenda, sifted
2 tsp sugar vanilla flavoring
Walnuts
Pour frosting on hot cake when it comes from oven.
Frosting may run over sides
