Baked Tilapia questions
I am craving Tilapia and I wanna cook up some Tilapia for lunches and dinners next week - but I was wondering how to cook it so that when I microwave it to warm it up next week that it isn't too hard and rubbery..........
any ideas? I know what seasonings and things I'm going to use..........but for you smarter cooks - cant wait for the suggestions....
Do I just slightly undercook it so that the microwave will cook it some when I warm it ?

Tilapia – Pecan Crusted
4 tbs. Dijon mustard
2 tbs. 2% milk
½ tsp. dill
1 cup ground pecans
4 tilapia fillets (6 oz. each)
In shallow bowl, combine mustard, milk and dill. Place ground pecans in another shallow bowl. Dip fillets in mustard mixture and then in pecans. Place on baking sheet coated with cooking spray.
Bake at 425 deg. For 10 to 12 minutes or until fish flakes easily with a fork.
Yield: 4 servings
Once you cook it just microwave it enough to get warm. Here is a great recipe:
