The Journey 11/12

It's hardly real to me that Thanksgiving is in less than two weeks. And Christmas is 6 weeks away!

Unlike most people, Thanksgiving is my least favorite holiday.  Most of my immediate family is close by, and I see them often. Those that I don't are those that I really don't want to see.

I really hate turkey, especially post-op. My original dislike for it stems from my  mom buying the biggest turkey that would fit in her oven, eating leftovers for almost a month, and then she'd do it all over again at Christmas. For almost two months we ate turkey in every form. When she finally trotted out the turkey croquettes, we knew it was over. (She even admitted to me recently that it was a little overkill.)

I do love stuffing, green bean casserole, and pumpkin pie, all things I don't need to be eating.

Do you have a favorite post-op dish for Thanksgiving? I love my pumpkin pudding:
1 can pumpkin (not pumpkin pie filling)
1 can evaporated skim milk
1 package no-sugar butterscotch or vanilla pudding mix
1-2 tsp. pumpkin pie spice

Mix it all together, chill, and serve. Sometimes I top it with pecans, or you could use cool-whip.

That's my story and I'm sticking to it.

Lynne I'm not that much of a Thanksgiving turkey person myself.  I love Thanksgiving and Christmas because my family is close and we have a great fun time together.  It's some of my favorite memories.  Growing up my dad's big family got together and had fun and so did my mom's.  I guess I'm lucky that I've always had this for holidays.  That's probably why I like the holiday season when so many others don't.

I like the pudding like you do.  I just use skim milk instead of evaporated.  I'll have to try it w/ evap.milk...probably is a little more rich.

Raising hand-another non-turkey lover-but I DO like nibbling on the leftover turkey-just don't like it fresh and hot...and I don't like dressing or giblet gravy...but I DO love me some yeast rolls...oops..better stop talking before I start gnawing on the keyboard..

LYNNE-I make that recipe-with skim milk-the last couple of years-got it here on the TMB-nobody knew it was "diet" and I've been asked to bring it again this year

I know turkey is tradition, but no one says it HAS to be on the table. Do a roast, or a ham. Do tacos! I think it is more about family time then what is on the table. As for traditional T-Day food, give me sweet potatoes!

I love plain baked sweet potatoes with a little butter and salt, or oven roasted with onions and garlic, but keep away that mess of sweetened sweet potatoes with gooey marshmallows on top!

I'm with you, Lynne! Plain sweet potatoes with just a little butter and a sprinkle of cinnamon is perfect for me. All that marshmellow goo just ruins a good thing!

You can keep the turkey, any form or it, just give me a bowl of cornbread dressing and a spoon of jellied cranberry sauce and I'm a happy camper!

I'll take them any way they are served. But one way is baked, with black beans and cumin on them. Sweet & smoky, toss some jalepenos on there and they have some spice. YUMMO.
