The Journey 11/8

I haven't had time yet to purge my cabinet and fridge, but it's definately going to happen.  I was strong enough, however, to walk away from the pizza at my daughter's house and came home to eat much healthier.

Tomorrow there is a meeting at work for a group of clergy, and I have to order something for their lunches today. Two of the ten members are vegan, the rest are meat-eating men. My plan right now is to get a platter where they can make their own sandwiches, but also have something like a pasta salad that all can eat. The non-vegans have requested cookies for dessert, and I was thinking of also getting a small fruit platter. Any other suggestions?

I was so exhausted last night that I did not do as much preparation for the week ahead, but I do have some boiled eggs and fruit.

That's my story and I'm sticking to it!

if you do a make your own sandwiches make sure there is a variety of veggies also...lettuce tomato onion cucumbers and sprouts. Vegetarians eat cheese but I am not sure vegans do.

No, the vegans don't eat cheese. If they did, it would solve some of the difficulty!

What about a salad buffet type thing? No iceburg lettuce! Lots of dark green greens, cherry tomatoes, boiled eggs, carrots, onions, various seeds, blue or feta cheese crumbles, variety of delli meats, 2-3 salad dressings, full and no fat would be nice. (I'm mentally going through Jason's Deli in my mind)The vegans can make whatever fits their plan, the carnivores had add deli meats and cheese to their salads, and the rest will fall in the middle somewhere.

It's only 10 people, and I'm not a food service person. I'm not putting that much effort into it LOL!

I ended up ordering a sandwich platter and a pasta salad, and picked up a fruit tray and some cookies. I think there's a bag of potato chips around here that hasn't been opened.

If they don't like that, they can go out for lunch.
