Protein Bars

As per requested from those of you that tried my home-made protein bars.  And If you didn't, make these and you can try them out.  They are really good.  And even if we don't need all the extra protein, these are still a really good afternoon snack or meal replacement.  Good on-the-go food!!

2 cups raw oatmeal 1 cup protein powder 1/2 cup flax seeds 1/2 cup wheat germ 2 cups trail mix (I use 1 cup Almonds and 1 cup sunflower seeds) 1/2 cups ground walnuts 1/2 cup coconut 1 cup honey 2 cups peanut butter   Spray oil in 9x13 pan, spread mixture and cut

Thanks Holly!  I'm gonna try to get the ingredients today!  I'll try to whip up a batch even though "someone" says we don't need all this darn protein(lol)!!

 Well, I ran the nutrient facts on this like we talked about.  Unfortunately the news doesn't look very good.  I'm not sure how many servings you cut that into.  So I assumed 24.  Depending on the kind of protein powder you use, the totals could be very different.  I calculated using protein powder with 135g per protein cup, no carbs or fat.   The results are below:

I made a couple modifications that helped a little, but still not great.  I reduced the honey to 1/2 cup.  And substituted 1 cup of pumpkin seeds for the sunflower seeds.

Does anyone have a recipe that doesn't use peanut butter?  Since RNY, I dump on peanutbutter, which is strange since I thought it was just sugar that did that.  I also don't know if I could handle the honey, but I don't know of a substitute to hold all the ingredients together.  Artificial honey isn't sticky.  I would love to be able to make my own.
