Good morning!!!  We had a beautiful day yesterday for the Walk from Obesity!!!  Trying to get hubby up now and go to the park with me and walk... but I think he's still in there snoring!!!  Got home from the walk and decided to have some left over shrimp from the day before instead of soup and paid for it dearly!!!  Don't think I will be eating shrimp for awhile!!! 

Anyone  try and new recipes lately?   As the weather is cooling off I've been looking for some new soup recipes and I made this one and really like it!!!!
Mexi Chicken and Corn Chowder

Makes 4 servings 
1 cup = 180 calorieas and 14 gm of protein

PREP/COOK TIME:  15 minutes

1 can (10-3/4 ounces) cream of chicken soup
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon mild chili powder
1/4 teaspoon ground cumin
1/8 teaspoon cayenne pepper
1 can (5 ounces) evaporated milk
1 can (4 ounces) green chilies
1 can (11 ounces) corn with red and green peppers
1 can (5 ounces) chicken packed in water (I used some mexican shredded chicken that I buy at HEB instead of this)

Mix soup, onion and garlic powder, chili powder, cumin, cayenne pepper and evaporated milk in a large saucepan.  Stir in green chilies, corn and chicken.  Heat on medium heat until mixture just comes to a boil; reduce heat to a simmer for 10 minutes. 


Okay so my plan today....(taking it easy today since I had a bad reaction yesterday to the shrimp)

Snacks: yogurt, sf pudding or jello

Good morning Paige!  I've been cooking pork shoulder all night on low in the crock pot to make Pozole (mexican soup).  It's very tender!  Hubs is gonna fini**** up as I expected he would(he thinks he is the king of soups, chile, beans & stews).  He tells me I'm better at desserts, dips & casseroles.  Your recipe above sounds real good.  I just might let him try it..lol!  I'll be heading out to the Texans game around 10:30.  I've already took the dogs out for our morning walk and it's starting out to be another BEAUTIFUL DAY!

S: probably some fajita meat, dip & few chips (tailgating on the way in)
L: Might stop by the tailgators on the way out and eat some more meat
S: Pozole (gotta try it when I get home)

I have a full tank of gas and can bring my own bowl for pozole... what time do we eat? 

LOL

Actually I love pozole and my kids love when I make it.  What grown kid doesn't like what their Mommy makes? LOL

No thanks needed!!! School and sewing have kept me busy among other things.  I am hoping I can start posting more often.  I feel as though a big part of me has been missing, well literally there is.. but you know what I mean LOL

PAIGE=that soup sounds fabulous-I love soup, in ANY season. I'll use it as soon as Corbin and get to our next "21 day" phase.

Eating didn't go EXACTLY as planned yesterday. GAYE's Keno hostess was a fantastic cook and made some sort of enchilada something. I spent some "bathroom time" during the Keno "break"...served me right...ended up not feeling like feeling eating the rest of the day, but DID get my fluids and vitamins in-and a shake, for some protein. Back on track today. Corbin and I will do some "meat cooking" for the week tonight, so my beef patty tonight will be fresh, not foiled wrapped...

D: Beef patty/WF Spicey bbq sauce/salad/WF french dsg

S: Orange

E: 45 minutes walking with Corbin-HAVE TO-the flyer came in the mail yesterday for the Thanksgiving morning "Turkey Trot" and Corbin wants us to do the 10K-that 6.2 miles (stll half the distance of Whiterock)

Will get my water and vitamins in and repack my weekly vitamin organizer

My mom threw in the towel on Tuesday and Michael on Friday... they both got too frustrated with it.  So they are just going to watch what they eat and exercise more...although I do think it helped them both break their carb addiction a bit!!!  Proud of you and Corbin!!!
