Monday Morning Weigh-In
I know Sarah is out of town with work today so I'll get us started...
I git hit with the night time boredom eating bug. Those homemade protein fiber cookies/bars are going on my No-No list! I've been justifying them because they are healthy, right? Lots of fiber to keep things moving and I even doubled up on the protein this time...which also increased the calories! They aren't the only things, just another of the 'healthy' things I've overdone this week. Plus I've been busy in y sewing room, not wanting to stop for anything, including food, so when I do I'm starving and grab the first thing....old habit that hasn't completely died yet.

I also had a gain this week, which is no surprise since we went out of town and had every meal out. When I stepped on the scale I was reminded of the that late night burger and tot's I had Saturday night. I will be back to my normal routine/eating and hope to get the gain off.

I found this basic protein bar recipe on a blog from on of the nutritionists that will be at the OH conference. I started adding stuff and came up with a nutty, fiber filled bar/cookie. I got bored with the bars and decided to try dropping them like cookies, I like them better that way. I use a tablespoon measuring spoon to scoop with and this last batch I got 36 cookies. I haven't run the exact numbers but I estimated them at about 50 cal, 10 proteins each. Just 2 cookies hold me all afternoon. If you make these, be sure to run your own stats as your ingredients stats will vary.
Dee's Protein Fiber Cookies
1/2c Greek yogurt
1 pump each French Vanilla, Coconut and Praline SF syrups...Or any of your choice
1 egg
3/4 cup Splenda OR Stevia in the Raw
1/3 cup creamy peanut butter....I really like the natural, fresh ground peanut and/or almond butters.
1/3 cup NSA apple sauce for moisture.
1 ½ cup quick cooking oats
2 Tablespoons ground flaxseed
2 scoops vanilla protein powder...use chocolate to change things up.
1 Tablespoon Cinnamon
1/4 cup cranberry nut mix (from HEB bulk bin)
1/4 cup Craisins
1/4 cup TVP
*1/4 cup fresh coconut
*1/4 cup pine nuts
*1/4 cup toasted/salted soy nuts
*1/4 cup chopped almonds
*1/4 cup SF chocolate chips...use chocolate protein powder.
*Choose any two of these...I change them up with every batch! Sometimes I add an extra scoop of something after dropping first dozen or so cookies. Use your imagination!
1. In a medium bowl, whisk egg, yogurt and Splenda until smooth. Add the peanut butter and whis****il smooth.
2. Mix all the dry ingredients together and add to the wet ingredients. Keep folding until well mixed.
3. Spread mixture into an 8-inch square pan coated with non-stick cooking spray.
OR
4. Drop tablespoonfuls onto baking pan coated with cooking spray or parchment paper. I like to flatten them out just a little with the back of the spoon or my finger. Sometimes I press a whole almonds into the top. You can drop them close to each other, they don't 'run'.
5. Bake at 350 degrees F for 25 – 30 minutes. For the cookies, start checking them at 20 minutes. They won't get brown until it's almot too late!
6. Let cool and cut into 10 – 12 bars!
As you can see there's lots of freedom with this recipe! If it sounds good, throw it in!
