WOOOOHOOOO for Thursday! They say it's supposed to cool off soon, I'm ready, but of course when it really gets cold I'll be complaining and wanting it to warm up, LOL Maybe I should just move to Hawaii or something, LOL
Did my something thoughtful this morning while making my coffee, I went ahead and made the first pot of regular coffee for the other group that's on our floor....

I have had a busy day so far sitting at the Honda dealership getting my lock repaired on the back of my CRV. I noticed last night when my hubby came in with dog food from the trunk and told me it was unlocked when I knew my car was locked that I noticed that. Had to get it done today since time is ticking away and the cruise is getting closer and closer. It is done then I had to take my MIL to lunch. I thought I was getting my replacement lens for my new glasses today but they PROMISE me they will be in tomorrow. They better be. I can't imagine going on the cruise with not having the lens changing to sunglasses !!! Hope everyone has a good week. I am kinda de-stressing some but not much. Thank GOD there will ( hopefully ) be no stress for me on the cruise. Can;t take much more. Love ya'll and have a great day !!!

Last night was great...I loved seeing my best friend. We talked football all night at dinner...it was great.
I have nothing to do today...outside of work. I'm going to drag myself through 8 hours of work, come home, get dinner, and if I feel like going to bed at 7pm...by golly I'm going to.
I have not much else...no energy to be 'perky' today. I hope everyone has a great day.
I got this recipe from the Low Carb Friends site. It was pasted kind of down the line, unsure who the originator of the recipe is to give credit.
The original poster used Jay Robb protein powder packet. I used the vanilla protein powder I had on hand, and the batter was thin after one scoop, so I added another 3/4 scoop. I also used vanilla Torani syrup in the batter as a sweetener.
Not sure it tastes anything like a real donut hole, as I haven't had one in probably years, but definitely worth making again.
Doughnut Holes
1 large egg
1/4 cup melted butter
Sweetener to taste, if needed
1 teaspoon vanilla
1 scoop vanilla whey protein powder (1/3 cup)
Coconut oil
Topping:
Sweetener & cinnamon
Taste and texture-wise, these fall somewhere in between true doughnuts and funnel cakes. They cook very fast, so make sure you have everything on hand!
Heat about 1 inch of oil in a heavy skillet until it's hot enough for frying. While the oil heats, beat the egg lightly with the melted butter, then add the protein powder, and vanilla. Taste and add sweetener if you want it sweeter. I find the Jay Robb Vanilla sweet enough.
Whisk together until all the lumps are pretty much broken up, then let it rest a minute or two and whisk a bit more (batter will still have a grainy look to it, but that's fine).
Using a large tablespoon or serving spoon, drop the batter by large tablespoonfuls into the hot oil in batches of 4.
Fry until bottoms are golden-brown, which will only take a few seconds, then flip.
Drain on paper towels, then sprinkle with sweetener and cinnamon to taste and serve hot.
Makes about 8-12 doughnut holes

Shelly's Mini Chocolate Protein Donuts
1 cup Almond Flour (aka Almond Meal) (Trader Joe's, health food stores, online or make your own)
1/2 cup Chocolate Protein Powder
1/2 cup Multigrain Pancake Mix (I use this)
1 teaspoon Baking Powder
1/2 teaspoon Cinnamon
2 Tablespoons Unsweetened Cocoa
1 Egg, beaten
3 Tablespoons Sugar Free Torani Syrup (I used SF Vanilla)
1 Tablespoon Canola Oil
1/4 cup Water
Preheat oven to 325. Mix all ingredients till well combined. Spray Mini Donut Pan with Pam. Fill 1/2 full with batter (batter is the consistency of brownie batter). Bake 8 minutes. Remove from pan and cool on wire rack.
Donut Glaze
4 Mini Sugar Free Chocolate Bars (or milk, dark or white chocolate)
1 Tablespoon Sugar Free Torani Syrup (I used SF Vanilla)
Nuke for 30 seconds or so till melted. Stir to combine. Coats 12 donuts.
For colored/flavored frosting: combine SF white chocolate & 3 drops or so of food coloring, SF Syrup and nuke for 30 seconds or so till melted. Stir to combine.
Dip cooled donuts into chocolate glaze and then into optional toppings.
