Menu Ideas? Lunch and Dinner?

Okay guys... I'm getting bored with my cheese, my deli meat dipped in mustard, rotisserrie chickens, etc... You know once you get into a routine with food, you sometimes get stuck there...

So please share your favorite meals/meal ideas and even snacks with me! I'm preparing for another grocery shopping trip (I shop for 2 wks at a time!) and am making meal plans... I even need breakfast ideas. I'm burned out on my activia and 1/2 of a thomas thin w/cream cheese.

I'm going to try the pizza soup some other OH friends gave me, and probably Sandi's hillbilly sushi (sounds yucky but it's yummy!), and probably some beef kebabs on the grill...but this still leaves me very short on meal ideas...

HEB reduced sodium meatballs, Ragu spaghetti sauce or FF Alfredo sauce, melt a slice of FF Provolone cheese on top

grilled shrimp salad.....shrimp grilled either on the pit on just pan grilled, chopped fine and mixed with 1/2 FF mayo and 1/2 greek yogurt, sweet pickle relish, dried dill. Served with crisp veggie chips.

Southwest chicken made in the crockpot

chicken or shrimp quesadillas....use carb balance tortillas, FF cheese, chicken or shrimp. Cooked on griddle until crunchy on both sides. Refried beans and guacomole for dipping.

 Kim.....I eat lots of cottage cheese with Splenda and cinnamon.   It is yummy.   I eat it both for breakfast and for lunch sometimes.   I also take canned samon that is like tuna...no bones or skin and make samon salad like you would make tuna salad.   It is nice for a change.   I also do snacky type things for lunch sometimes.....fruit and yogurt.......peanut butter and apples.   My new love is a item bought at Costco....it is freeze dried fruit.   It is like 35- 40 calories and they are absolutely delish.....bananas/ strawberries, apples and pears.    Yummy.    I also do chef salads and take grilled shrimp, or chicken fajata meat and put in the salads along with boiled eggs and cheese and use spray salad dressings.    Hope that helps you with some new ideas.

Dee, thank you for the ideas! The quesadillas definitely sound delicious, and what is southwest chicken? I'll do the meatballs too!

Viv, those ideas sound great, do you have any other faves that are a bit higher in protein? I'm not too big on cottage cheese, but I will definitely do the fruit and of course the pb! LOVE it. I also have a costco membership, so I'll check the fruit out.

We have a microwave quesadilla maker that works great.  Mary makes them with 4 kinds of cheese, chicken, garlic, onions, and spinach.  Yumm..   And I love to eat them cold too.

 Kim....I also do lots of Fage Greek Yogurt ( you can buy a huge container at Costco cheap !!!)   I do the fage yogurts mixing with splenda and frozen fruit...strawberries, blueberries.   Also quite a bit I will bake a potatoe and add fage yougurt ( as sour cream ) cheese and onions and eat that for lunch or dinner.    There are lots of different things that I do as meals so I don't get burned out.   The fage yogurt is low in calories and very high in protein.

I do chicken in the crockpot all the time....

put as many chicken breasts as you want in the pot... add 1 of the following:
1 jar of salsa, or picante sauce
1/2 bottle of SF BBQ sauce
1 can cream of mushroom or chicken soup
1 can Ranch style beans

cook on high 4 hours or so.... then shred meat with a fork.... DH gets his over rice or pasta, I eat mine with a tortilla or crackers.

You can also add any veggie you want to make it a casserole. Just add fresh stuff with the chicken, frozen stuff about 30 mins before serving.

Also you can bake a whole chicken in the bigger crockpots.... just rinse chicken inside and out, rub down with salt, pepper, garlic powder, whatever you like, stick in crockpot and put the lid on... 4 to 6 hours and it will be falling off the bone...

Hey Kim, can you send me the pizza soup and the hillbilly sushi ecipe recipes!! I am always looking for new stuff! New thing I like is precooked shrimp marinated in a mix ox of pico de gallo and ****tail sauce...omg sooo good!!!

My hillbilly sushi...  (got it from the ex and its cause the kids LOVE it!!!) THREE ingredients..

sliced ham (or turkey) softened cream cheese (or spread), dill pickle spears (dried off with a paper towel).

Lay out the meat slice... spread a layer of cream cheese on the meat and place the dill pickle on it and ROLL!  slice them big or small or however you want.  (I make them and put them in the freezer to "set up".)
