If you actually click on the recipe link you can change the servings and it will recalculate everything for you. I thought it sounded pretty neat and has a ton of protein! I know the carbs are a little high but I know some of you can handle that so I thought I would share!

- 2 tablespoons rolled oats
- 1 egg white
- 1 tablespoon vanilla-flavored whey protein powder
- 3 tablespoons farmer cheese
- pinch of grated orange zest
- greek yogurt, honey, sliced fruit (optional)
Directions
1. GRIND the oats in a coffee grinder or blender until finely ground; set aside. Preheat a waffle iron for 4 minutes, or according to the manufacturer's instructions. (A drop of water should sizzle and bounce when dropped on the iron.) 2. MEANWHILE, beat the egg white and protein powder in a medium bowl with an electric mixer on high speed for 2 minutes, or until the powder has dissolved and is incorporated into the egg white. 3. BEAT in the cheese and orange zest for 2 minutes, or until completely smooth. Stir in the ground oats. 4. COAT the heated waffle grids with cooking spray just before using. Pour the batter onto the hot iron and cook for 3 to 4 minutes. Serve with the yogurt, honey, and fruit, if using.Nutritional Facts per serving

The HEB cheese store would be my first stop.
There is also "queso blanco" which is described as a creamy, soft, mild, unaged cheese. It is supposed to be very similar. It also says that a mild feta is similar. They also say that Canadian farmers cheese can be interchanged with Colby or Cheddar.
IMHO, I would think you could use many different cheeses that would suit your tastes as long as you keep in mind that one cheese will melt differently than another.
I bet Danni will come up with a much better answer for you though!
Glad you are feeling better!
