Would you eat this?
It wasn't this recipe, but I did make protein peanut butter balls awhile back. If you melt Sugar Free Valor Chocoolate, roll the balls in it, they are like buck eyes. I nick named them "Rolie Polie with Chocolate All Ovie". LOL
Mix the following ingredients to make the protein balls:
1 cup peanut butter
1 cup dry powdered milk
4 packets of Splenda
1 cup vanilla protein powder
Roll into 18 balls (actually these were a little big but they were for Tim... but probably make them smaller), refrigerate. Make sure they are chilled before trying to dip in the chocolate.
Melt sugar free chocolate (I used Valor SF Dark Chocolate)
Dip the protein balls into the melted SF chocolate
Let cool on wax paper
**I have not done it yet, but I did purchase BE's Peanut Butter Cookie protein powder. I bet you could adjust the recipe to use less peanut butter... OR use PB2. Keep in mind though that I did not make these for ME, but I made them for a non postop. The serving size of 18 balls really need to be 36 as they were too big for me, a wls person.

Those look really good... I have a recipe from my Grandma for peanut butter balls (called buckeyes here in the south like you said).
What are the stats on those for your recipe? Could you use natural non sweetened peanut butter and add a little more splenda?
I might have to try this... I've not ever tried the PB2, but may have to... I'm not a HUGE peanut butter fan, but maybe sometimes will have a little.
