Ok, here's a challenge for you... I rec'd this recipe via email and it looks SOOOO good. But I'm not sure how to make it WLS friendly, or if it's even possible. I know I could use Murray's fudge-dipped vanilla wafer cookies in place of the Oreo's. Sweetened Condensed Milk Substitute for Diabetics

Recipe #143017 | 7 min | 5 min prep | 1 1/3 cups (Change Servings)   RECIPE BY: Redneck Epicurean

Being a diabetic is hard. It's difficult to find everyday ingredients. However, if you use some of the "in-a-pinch" recipes and make your own, you can substitute the sugar for Splenda and **HOPE** it turns out right. This did and it's really opened doors for me as a dessert maker.

Ingredients

  • 1/2 cup cold water
  • 1 1/3 cups powdered milk
  • 3/4 cup Splenda granular
  • teaspoon vanilla

    Directions

    1. Stir milk powder into cold water until dissolved.
    2. Microwave 1 minute or until steaming. Stir in sugar and vanilla.
    3. Cover and chill in the refrigerator.

I understand you wanting to get a jump on the next round, but you may just need some time for "you", if you know what I mean! You've got a HUGE change comin' --- don't under-estimate the need to prepare yourself emotionally and mentally, (as much as you can...??)     Tara, you will not believe this, but I'm gonna say it anyway.  The girl at my work that makes all the delectable sweets actually made this today.  In turn, she gave me the recipe and suggested that I see if I could make it sugar free.  I did some research and found a great recipe for Sweetened Condensed Milk, just like Shelia's.  So, I am gonna try to make this for my family this weekend.  If you make it first, please be sure to include food porn in your review! Sounds like you are on the right track with your substitutions!

    Bariatric Eating has a recipe for Sweetened Condensed Milk.  This is what I copied and pasted.  I have not tried it but many seem to like it.  I have not looked at the stats on any of Scott or Shelia's.  Just thought I would throw this one in for variety.  SF SWEETENED CONDENSED MILK 1/3 cup boiling water 4 tablespoons softened butter 3/4 cup Splenda 1 cup powdered milk (dry) 1/2 teaspoon vanilla Blend all ingredients together with a hand mixer until thick and smooth. Cool slightly before using or store in the fridge. This gets VERY thick when cold, so microwave for a couple seconds and may need to add a couple tablespoons of milk to thin. Makes ALMOST as much as a can of Eagle Brand...so just use the whole thing in a recipe that calls for one can.

    Thanks Mel!   This is exactly what I'm looking for.  I have found several recipes that call for Eagle Brand milk, but have not made them.  Next time I will give this a try!   You rock girl!

    I studied the recipe hard first, cause they are so similar... like Tara said, looks like the only diffference is the butter.  I wonder, does that make it richer, creamier, thicker? I have no idea!?!  I would be interested in getting your opinion on the taste differences so if I ever want Eagle Brand Milk, I will know how to make it! But, why do I doubt that I will ever make Eagle Brand milk? lol

    Melinda ~ Bless you for jumpin' in here so quick to help a girl out! I think it would be interesting to make one batch using Shelia's recipe, and one using yours. The main difference is the butter. Wonder if it would make a significant-ENOUGH 'taste' difference to be worth the added calories? Though the calories in 4T divided by the number of servings this dessert makes may be almost inconsequential. Are calories EVER inconsequential, though?   hmmm... food for thought...         ~ Tara

    The sugar free Murray's cookies contain hydrogenated vegetable oil (transfats by any name are still the same)....There are sugarfree oreos that are free of this bad fat. I can find them locally at Food Lion. I want to keep track of this as I have a graduation party coming up for my 17 year old. Thanks Beth B in Chattanooga
