FP=Food Porn! Last weekend we had a spaghetti dinner at church.  All of the sweet little ladies were asked to bring desserts.  Now both Beth and I knew we would not be able to eat them, but that was OK. RJ asked if he could be our able bodied assistant and taste test all the desserts.  Needless to say he did not finish all of them, but gave it the old college try!  One of these desserts stood out in his mind as -weight-loss friendly.  It probably wasn't, but he thought it could be if mama and I worked our magic on it!  Isn't it wonderful when your child thinks you are magic?   OK, back to the topic.  We looked at the ingredients of this dessert and thought we could do it.  All I can say was it was wonderful!!!!  We are calling it Sugar Free Brownie Trifle!  If interested, please click here. As a warning to myself and others:  please remember what stage of this journey you are on!  As creamy as this is, I don't think it would suffice under the "liquid diet" rules of the game. So, if you are in that phase...STEP AWAY FROM THE COMPUTER!  Keep in mind that “sugar free” does not mean calorie free.  And most important, “Food For Thought and Moderation Too!” is not only the title of my blog, it should be a way of life!  Think about it before you eat it!  Enjoy!

I have had the full sugar version of this in my pre-WLS days. O-M-G, it is so-o-o-o good!!! I think I may have to make this for a dessert that I take to my kids house. YUMMMMMMMMMMMMMMMMMMM!

Since surgery I have only eaten actual spaghetti once.  We use spaghetti squash.  It's not the same. but it is good!  Cut the spaghetti squash in half length wise ( we only cook a half at a time), scoop out the innards (seeds) and place flat side down in a baking dish.  Pour a little water in the baking dish and cover with saran wrap.  Microwave for 20 minutes.  When finished cooking, handle with care because of heat, take a fork and scrape the inside of the squash.  It will come out like noodles.  Let it drain for a little bit and then cover with your favorite spaghetti sauce.   Let me know what you think!

You may find spaghetti doesn't set well on your pouch. I was a huge pasta addict before surgery. It was one of my comfort foods. We lived in Italy for 3 years and I was in pasta heaven! The most I can handle now is a few elbow macaroni that have been overcooked, or a couple of bites of lasagna made with the "no cook" pasta sheets. I make a pastaless lasagna for myself when hubby is in the mood for spaghetti or lasagna. I take: 1/4 cup LF Ricotta 1 - 2 oz browned ground beef, meatballs, etc. 2 Tblsp spaghetti sauce 1/2 - 1 oz mozzarella Layer this in the order given into a small oven safe dish or ramekin. Bake at 350 until hot and bubbly (about 5 - 10 minutes) and the cheese is melted. You can also put this in the microwave to heat. I promise you will never miss the pasta.

For those of us who are chocolate lovers, that recipe should be outlawed.  It's sinfully beautiful and can't wait to try it or make it.  Thanks. Kathy
