Ok, I'm not very good at trying new things, but this just sounds too good for me not to try. I'm a little concered about the spice of the pepper jack chesse and the mexican seasoning, but I'm gonna try just as it say's. I will let everyone know how it turns out. Thanks for posting it Scott. Cheryl,  I tried it the other night, it was wonderful.  I am not a big fan of spicy food, so I put mozzerella cheese on mine.  Very easy dish to make with a BIG taste.

I'm also not big on spicy foods. So I got mild taco seasoning and also I am subing swiss cheese for the pepper jack.... I got the stuff for it and will be making it either tomorrow or this weekend.

IT IS SOOOOOO YUMMY! I made this the other night and the whole family LOVED it! I think I must have gone a little easy on the PJ cheese, cuz we couldn't really taste it - but the taco seasoning on the outside was superb! next time I make it, I will use a little more cheese for the loved ones in my life, but I think I'll try cheddar in mine (I love cheddar cheese!) But the whole family really raved about it.      I'm sure we'll have it about once a week or so for a while! ~ Tara

I'm fixing it tonight with plain Monterey Jack cheese. Neither hubby nor I like spicy stuff so I knew the Pepper Jack was a no go. I'll use mild taco seasoning.
