Poop Bread (No I am not kidding)
Susan asked that I post this. It came from a lady off the Bariatric Eating board. Shelia says it works... hey she ate one mini muffin and in 45 minutes, had a nice trip to the bathroom. I ate 4 in 2 days and it didn't work on me.
Rochester Poop Bread, aka Fiber Loaf, aka Fiber Muffins
preheat oven to 350
In a medium bowl microwave for 2 minutes:
1& 1/2 c Kellogs All-Bran or Fiber One cereal
1& 1/2 c warm water
add 2 T Steele's sf country maple syrup (you can substitute any SF syrup)
1 tsp ground cinnamon
dash of ground cloves (you can use a little nutmeg instead)
In a separate large bowl mix together:
1/2 c white flour
1/2 c almond or hazelnut flour
2/3 c Natures sweet crystals or Splenda
2 tsp baking soda
1/2 c raisins (OR you can also use cranberries, or sugar free choc chips!)
1/2 c chopped pecans or walnuts
dash salt
Fold wet ingredients into dry and mix gently but thoroughly with wooden spoon. Spread in a well-sprayed pyrex loaf pan. Bake at 350 for 1 hour if using a bread pan. Bake 25 minutes if done in muffin pans. Bake 15-20 if done in mini pans...

I found these stats on a post on bariatric eating.
1/16 of a batch, or 16 cupcakes.
Per Serving: 107 Cal (29% from Fat, 7% from Protein, 64% from Carb); 2 g Protein; 4 g Tot Fat; 0 g Sat Fat; 1 g Mono Fat; 22 g Carb; 3 g Fiber; 4 g Sugar; 26 mg Calcium; 1 mg Iron; 174 mg Sodium; 0 mg Cholesterol
This shows 22 grams of carbs, but 3 grams are fiber, which would net the carbs at 19.

I'm sorry. I don't but the sugars are low as you don't add any sugar... and the fiber is very high so the carbs minus fibers would be your net carbs... you can go to bariatric eating, click message board, then general, then do a search under "rochester poop bread" to read all the responses about the benefits of the bread/muffins. You do need fiber, and yes it does have carbs in it, but it is very high in fiber.
