Awful cookies

Once again I proved Tim correct.  And incorrect.  lol He says my cooking is awful.  I made low carb spaghetti tonight.  I havent had dreamfields in months and have told him all week that I wanted some spaghetti.  So, proved him wrong. It was  delish! Then thought ok, I did some cooking, liked it...  let me make some sugar free peanut butter cookies.  One cup peanut butter, one cup nature's sweet crystals, one egg, tiny bit of flour to make it cookie like.  Awful!  He liked them though but I hated them. When half the batch was in the oven, I got to thinking...  so I added a smidgen of oats, smidgen of sf choc chips, a little bit of vanilla, and a little bit (a squirt or two) of cinnamon bliss.  I liked these cookies better but he did not.  I only ate one all together (half of peanut butter, half of a "whatever you call it").  they will probably go in the trash...  thats why I dont cook!  urgh!

Good Morning Melinda! Sorry your cookies did not turn out right.   I make a peanut butter cookie with no flour and they are awesome.  Very similar to yours.   1 C peanut butter (better with Jif or a name brand)    1C splenda   1 lg egg   1 capful of vanilla   and a pinch of salt  it makes 12-13 cookies.   The pic and nutritional values are on Scott's blog.   Have a great New Years! yumm....cookies!! :-D

I have some Big Train Peanut Butter cookie mix in the cabinet. I tried the Big Train brownies and didn't care fore them too much... turned out really dry so I've been leary of the cookie mix!

I'm not big on cooking either...when something doesn't turn out right or burns, I get so frustrated and end up throwing stuff. I really have to be in a really really patient mood when cooking and trying new recipes. Better luck next time!!

Know the feeling Melinda. I don't cook as much as I should because I have little to no patience BUT have to say am very proud of myself. I made some roasted sweet potatoes and a squash quiche on Christmas with recipe help from Freddie and they both turned out great. You will have to try the recipe Beth mentioned for Sf peanut butter cookies, she made me some for my b-day and they are awesome. As for me my brother gave me some cooking pans for Christmas a hint maybe? : ) I will have to put them to use and cook more often. If ya'll here lots of fire engines up in Springfield then you know why. LOL

I think I just dont like them anymore!  Tim said they tasted pretty good to him, and I hated them!  Now the half batch that I added the oatmeal, sf choc chips, cinnamon bliss, they tasted better... plus I let them bake a little longer and they got crispier.  I dont think peanut butter is appealing to me anyumore..... my tastes must have changed!

Hey all, has anyone tried the almond flour, it is alittle high in price, saw where it was used with the wheat flour, just wonder if any of ya'll had used it. Please let me know. When I talked to my nut. she said it would best be used with whole wheat flour. I was wondering. 56.gifBarb
