Cranberry Salad

I again took this from the BE site...  (bariatriceating.com) and wanted to share it... for those who want it for holidays...LET ME ADD A DISCLAIMER.  On the sweetened condensed milk, pineapple, and cranberry sauce, do not add the regular!  Or else you might get sick!  There are bypass friendly recipes for both included...  please read directions carefully. Ingredients: ***1 can sweetened condensed milk   **SEE RECIPE BELOW FOR SF HOMEMADE** 1/4 c. lemon juice 20 oz can crushed pineapple, drained   Libby's Splenda sweetened pineapple **16 oz can whole cranberry sauce  **SEE RECIPE BELOW FOR CRANBERRY SAUCE** 2 c. miniature marshmallows   **Available from Bariatric Eating 1/2 c chopped pecans 8 oz SF cool whip 1 tsp red food color (opt) Mix the milk, juice, food color. Add the sauce and mix well. Add the rest of the ingredients and mix, then gently fold in the whip topping. Pour into an 8x11 casserole dish and freeze. SF SWEETENED CONDENSED MILK (BYPASS FRIENDLY). 1/3 cup boiling water 4 tablespoons softened butter 3/4 cup Splenda 1 cup powdered milk (dry) 1/2 teaspoon vanilla Blend all ingredients together with a hand mixer until thick and smooth. Cool slightly before using or store in the fridge. This gets VERY thick when cold, so microwave for a couple seconds and may need to add a couple tablespoons of milk to thin.   Makes ALMOST as much as a can of Eagle Brand...so just use the whole thing in a recipe that calls for one can. CRANBERRY SAUCE (BYPASS FRIENDLY) 1 12-ounce package of cranberries 1 large size raspberry jello (SF) 1-2 sleeves of Crystal Lite Morning Sunrise Orange (depending on how much orange flavor you want) 1/2 Cup Splenda, or to taste Clean the cranberries and dump them in a pan with 1 1/2 cups of water. Bring to a boil.  Stir in the jello and the CL; taste and add Splenda if needed. Let the cranberries cook down for maybe 10 minutes - you might want to smush them up a little bit. That's it - chill until jelled. This is delicious and very low calorie.

This sound wonderful. Thank you so much for sharing. I have alot of my old receipes that I was gonna have to give up because of the sweetened condensed milk, wow this will help. One of them is for a Key lime pie.  I think that it would be good for my family too.   hugsBarb
