Sweet potato casserole for Thanksgiving
Ok its not casserole... just wanted to get your attention. This is a single serving portion only.
I got this from Susan Maria's website (bariatriceating.com) and wanted to share it with my friends who might really really want sweet taters for the holidays.
If you take a sweet tater, and bake it, microwave it, whatever... add some butter and some SF davinci caramel syrup... and some pecans... and maybe one sugar free marshmallow cut into pieces (I got the SF marshmallows at the BE store while in Fort Lauderdale). It was yummy. I love sweet potatoes.
I'm going to make sweet potatoes this year using the brown Nature Sweet Crystals and some Cinnamon Bliss. My family doesn't like the nuts or marshmallows so I have made baked sweet taters for years.
Bill and I have used brown Splenda since it came out but it does have some real sugar in it where the Nature Sweet does not.
This is one of the dishes I am taking with me to Iowa. I'm also taking a SF pumpkin pie, SF jellied cranberry sauce, and my Cinnamon Bliss.
I don't know about the protein content. I do know that pumpkin and sweet potatoes are high in fiber and other stuff that is good for us and outweighs the carbs.

Hey Melinda, Thanks for the idea! When Beth and I were shopping the other day (before your post), I suggested baked sweet potatoe. Well tonight we baked a sweet potatoe,. I then added a little "I Can't Believe It's Not Butter" (fat free) and a splash of DaVinci Caramel. Wow, what a great flavor! Once again "THANKS".
