Mike sang happy birthday to me while we were reorganizing the house this morning... or should I say he shouted it walking room to room... our carpet is coming today, FINALLY! So we stayed up very late last night rehanging the closet shelves to suit me (I'm taking his old room, he finally got his master bedroom done) and moving all the stuff out so they can lay carpet. Soon and very soon all the remodel will be over! Thank you Jesus!

Speaking of supper, last night I bought some chicken, threw it on the grill... OK OK You will see how much I don't know about food... and it was all dark meat!! I hate dark meat. So does Mike. I was so mad... I called him as he was on his way home and he stopped by to pick us up some chicken for supper... so much for all that hard work on the grill.... I don't know the difference in boneless skinlless breasts and thighs evidently. Next time I will read the wrapper better.....

I've never seen boneless thighs in the meat counter. I have seen them with the single bone down the center though. So...did the puppies get the thighs?
My grandson has requested my lasagna for his birthday dinner Friday night. I have to go get the stuff tonight and I'll make it tomorrow night so it can sit in the fridge overnight. I'm going to make a small pan for me with thin sliced zucchini instead of pasta.

That what I want to know - what happened to the chicken thighs! Of course, I would be wondering that but at least I wasn't the first to ask!

I got a pastaless lasagna receipe and tried it. It was pretty good but it did not hold up well - fell apart when trying to put it on plates - it was more like sauce and cheese than lasagna. What receipe do you use? I noticed you said you use zucchini instead of pasta. That might work better than pastaless. How does that work with zucchini and how do you cut it?

My lasagna recipe was taught to me by my Italian neighbor when we were living in Italy. It is a northern Italian version with tomato & meat sauce as well as a white sauce. It also has shaved ham in it. Everyone I have ever made it for is just blown away by it.
To use zucchini instead of pasta...slice the zucchini lengthwise in slices about 1/4 inch thick. Then you simply use a layer of these long zucchini slices instead of pasta. The zucchini cooks when you cook the dish. One of the ways to keep lasagna from falling apart when you serve it is to let it sit for about 15 - 20 minutes after you take it out of the oven before you even cut it. Also, use just enough sauce to keep it moist. Too much sauce will make it runny.
