Lunch on the go?

Hey Guys! I'm a school teacher, so I find it is easier to take my lunch with me. I only have 3 weeks of school left, but the thought of eating tuna for 3 more weeks makes me want to gag. I do a slim fast thingy for breakfast, but I'm needing some other lunch ideas. I need something that I can keep in the fridge and eat cold or heat in the microwave. I've been very leary of trying new things because I didn't want to get sick at school, but I can't take the tuna anymore. Any suggestions for something that tastes good and it high in protein?

Hey Kristen, I like the chicken in the pouch, like the tuna in the pouch, it is by Bumble Bee and it is a very tender chicken breast. I know I can not eat the entire thing, actually it takes about three days for me at lunch to complete. I have found it at Krogers for around $3.00 a pouch in the canned meat section, by the canned chicken not the tuna. However, they also have salmon in a pouch as well, the chicken has Garlic & Herb seasoning, 110 calories, 1.5 grams of fat, 1 carb, and 24 grams of protein. I fold the pouch over and place it in a sandwich zip lock bag in the fridge. (keeps well) This chicken is very, very tender and I found it to be the only chicken I could eat for a while, I can even cut it with a plastic fork. I have adde d some Walden's farm sauces to it and flavor it differently, like BBQ and Honey Mustard. Hope this helps!!! Shelia

13 1/2 days of class left, YEAH!!! How about a yogurt with a scoop of protein powder in it. I'm pre-op, so I'm just guessing here. Beth

Susan Maria's site, BariatricEating.com has some great tips. She has some quick lunch and breakfast tips on there. You may want to try it. There's a greek egg salad recipe too. I always resort to my good ole faithful chicken. The cafeteria has rotisserie chicken that is moist so if all else fails, I will buy it. They also have a catch of the day fish, and their salmon is wonderful. It has to look really moist though or I can't get it. Good luck!

Now that our students have gone home for the summer and the cafeteria is closed this week, I am having to pack my lunch too. Some of my favorites are: homemade chili part of a Weigh****chers, South Beach, Lean Cuisine, etc. frozen meal - I thaw the meal and portion it out into plastic containers. I can't tolerate most foods reheated so I have to only heat the portion I'm going to eat. One of these meals lasts me for 2 - 4 meals. Deli turkey or chicken wrapped up with cheese refried beans, enchilada sauce & cheese (Taco Bell Pintos & Cheese) Yogurt with protein powder soup with (unflavored) Any Whey protein powder I'm glad I only have to pack my own part of the time though. I like having a hot lunch that someone else cooks.

Hi Kristen! Finding lunches is my biggest problem too! I usually get the frozen lunch meals - like Lena cusine or Ka****here just are not to many that do not have rice or pasta in them - which is my problem. I do not like pasta and do not like rice. But there are a couple out there that are baked chicken and veggies (lean cusine has a good one). April got me on the Boca burgers. They are individually wrapped and you just throw them in the microwave for a couple of minutes. I add a piece of cheese and you can add lite mayo, ketchup, mustard or whatever you like and you have a cheese burger - no bread - full of protein. They have some good soups now (like the Chunky Campbells). The Chili is the best and they have ckn tortilla (I still try to stay away from anything with rice and pasta). They are a couple of dollars but that is for like 15 oz so a lot goes to waste but they are really good and full of protein. When I am at home, I eat the beef and bean burritos. I heat up two of them and and open them up and take out the insides and throw away the burrito part and put some cheese on it. Not as healthy but really good (2 of them without the burrito and with cheese is about 4 oz). I sometime also eat refreid beans (in the can) with cheese (yes, I love cheese!). I hope you find something that works for you. Misty
