So whats for Dinner?

Today I am stuffing Pork Chops and I have a large family and there will be several extras here for dinner. So I start with 16 large Chops cut 1 1/2 " thick with a pocket cut in the middle. For the stuffing left over corn bread from last night mixed with 2 pounds of ground and browned mild Italian Sausage stuffed in to the pocket. Inject a mixture of Mojo. Sour Cream, Fat Free Ranch Dressing and Tabassco Sauce whipped together in a medium bowl and warmed in micro, easier to inject warm, one injection above and below each pocket. Use a large glass baking dish with lid and put in a thin layer of low fat Campbells Mushroom soup topped with thin sliced red onions and bell pepper strips then a layer of Chops more soup, onions, peppers Chops. There should be 3 layers and covered with lid bake at 400 degrees 1 hour Blackeyed Peas fresh in the Crock pot simmering since Midnite on low with smoked Turkey wings diced Onions, Green Peeper, a touch of Jalapeno, Black Pepper, Shaved fresh Garlic, Wocestershire, a couple drops of Tabasco. No they wont be overly spicy just a hint of heat. Green Salad with Pinapple apple, and Mangoe just to keep you regular. The bread to day is Pumpernickel I made 2 loaves this morning Raspberry Ice Crystal Light for the Glasses. Dinner is served at 5 pm today. Cant you just tell that I am starving to death down here and all I will eat is the peas and Salad.

oh my goodness!! I haven't had a meal that sounded 1/2 that good in forever... I haven't even tried pork chops since surgery..hmm... For dinner tonight... 1/3 cup. egg beaters w/1 slice of RF Cheese and 2 slices of turkey bacon - exciting huh?? Enjoy your dinner!!! Have some for me

Gosh Daniel where were you when I got married? I am losing the weight just reading all this. If you cook like that on a daily bases no wonder you have to have surgery. But it sure sounds yummy. I have never eaten anything like, course I could never handle Tabasco sauce either since I had an hiatal hernia. Hurry and move to TN, so then you can make all of us a healthy meal for those of us who have had the surgery. I'll try anything at least once. Always, Kathy

Just got back from school...had to spend hours in the library tonight on advanced stats...what in the world they have anything to do with being a probation/parole officer I have no idea, grad school sucks but I am determined to get through...only a couple of more weeks and I'm out for the summer, Yeah! So what's for dinner here, well, I fixed them this morning so they'd just have to be popped in the oven later. I take fire roasted red peppers and stuff them with a mixture of lean ground beef, onion, seasonings, bake them until the beef is cooked and top it all off with feta with sun-dried tomatoes and basil. Delish... Dan, how do you do so much, cooking such a big meal and baking bread, and work a full time job? You must be either superman or a glutton for punishment, lol...or do you just really love to cook? Did you check out the website I told you about? Oh, and I see you like mangoes...they are my absolute favorite fruit but are expensive up here...when my mom still had family alive in Ft. Lauderdale, they would bring us bushels of mangoes every time they visited...there are only a couple of cousins left down there now and they never visit...boohoo for me!

Kym I just really love to take care of those around me and yes I do love to cook. Since starting my 6 month diet and pursuing this WLS I can no longer eat the majority of this stuff but it is what the family wants so I take care of them. As far as the bread goes I make bread 2 mornings a week Tuesdays and Thursdays. But now for the rest of the week I have no one to cook for they are all gone for spring break. As far as how do I do it all I am very structured. I work 4pm till midnight and I come home from work and swap the loads of laundry, watch the late news and fold what ever comes out of dryer. I am generally in bed by 1:30 am and I am back up at 6:15 am to get the kids off for school. I stay up from that point on after they leave for school I assume the position of Mr. Mom and clean the house wash dry fold and iron clothes. Mon, Wed, and Fri. On Tue, Thur, and Sat I do all the outside stuff. Before I leave for work I make certain that their dinner is done and in the oven for them to eat by 5:30 pm. I have been keeping this same routine for 12 years now it all started when she went back to school for her Masters Degree and I had to step up and do more so that she would have the extra time for her studies. I just never slowed down.

I completely understand. I get up every morning at 6 to get my daughter to school. I study for a while, write a paper just about every day, check my emails, get on here of course!, then I will straighten the house up...I keep it pretty clean so usually I just have to do light dusting, vacuum, any dishes that need doing...I don't have to do any heavy cleaning if I keep it up every day so once every couple of weeks I just do a whole house top to bottom heavy session...then I pay any bills, do the shopping if any, run any errands I have to...at 3, I leave for school two days a week. If it's not a school day then I get my daughter off the bus, help her with her homework, play with her, and start supper. Get her cleaned up and in bed...do more homework or surf the web some more...read for pleasure, watch a little tv...if I have Scouts the next day then I make sure I have all the materials for the meeting...and IF I have any time I may do some baking for my family. Usually I am up til 2 or later...I am lucky as I have always been able to function on little sleep and sometimes prefer it! A couple of days a week I clean my parents house for them as they are disabled and elderly...usually take care of their errands and phone calls, etc. But I have to admit, I can't wait until I am out of school and can quit reading 600 pages a night. I love my subject matter, most of the time (Juvenile Justice/Criminal Justice) but 600 pages on average a night is just too much!
