cooking with what?
Hello everyone! I am looking for a website or even just some good recipes I can try. I am ready to start sitting at the dinner table with my family again and actually have a plate of food infront of me, not something pureed or baby food. I have googled some recipes but just can't seem to find anything that would fit into my diet. I am so use to cooking with a ton of butter or mayo (which I already know makes me sick as a dog
) that I need to get use to cooking with out it since my family will benefit as well. So any great ideas would be great. I also wanted to thank everyone on this bored, I may not post all the time but just reading what you guys have to say helps me in more ways than anyone can imagine. I am now 5 weeks out and am down 38 lbs.

Yolkless Deviled Eggs
Preparation time : 15 minutes
Serves: 12
Ingredients
12 hard boiled eggs (discard yolks)
1 cup nonfat cottage cheese
1 Tbsp. minced green onion
1 Tbsp. Dijon mustard
2 tsp. minced garlic
¼ tsp. curry powder
paprika and ground pepper to taste
parsley for decoration
Preparation Instructions
1. Shell eggs and cut in half lengthwise. Remove the yolks and discard or save for future use. Place the egg white halves on a plate and set aside.
2. Blend the cheese, mustard, onion and spices in a blender or food processor.
3. Spoon the curry mixture into the egg white halves and sprinkle with paprika and pepper. Decorate with parsley sprigs if desired. Makes 12 servings.

Crab Cakes
2 6oz cans crab meat, drained (NOT chunk style)
1 cup grated cheddar cheese, low fat
½ cup egg substitute
2 tsp garlic powder
½ cup diced onion
2 tsp dried parsley
½ cup bell peppers, chopped
2 tsp olive oil
2 tsp Worcestershire sauce
2 tsp hot sauce
Salt & pepper to taste
Preheat oven to 375 degrees
Mix all ingredients. Use foil cups sprayed with Pam in a muffin tin and fill each section about ½ full. Bake 20 to 30 minutes or until done all the way through. Makes 12 cakes.

Eggplant pizza
1 eggplant
1 teaspoon oregano
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
3/4 cup pasta sauce
1/2 cup mozzarella cheese, shredded
2 tablespoons parmasean cheese
Slice eggplant to make 4 center cut slices. Prepare a large pot pf boiling salted water. Drop easch slice of eggplant into water for approximately 2 minutes. Allow to drain slightly. Spray a cookie sheet with vegetable oil spray. Place eggplant on cookie sheet.
Sprinkle with oregano, basil and thyme. Bake at 400 until starting to brown. Remove frm oven. place even amounts of pasta sauce on each slice of eggplant, top with parmasean and mozerella cheese. Return to oven until sauce is hot and cheese has melted and is slightly browned.

Crab & Shrimp Spread
I was ordered to post this recipe I made up after some of the "girls" tried it. It is loaded with protien and tastes pretty good. I serve w/ reduced fat crackers.
