Here is the nutrition information for the 'fake' mac and cheese made with the low fat ingredients. I posted both four and six serving amounts. Thanks to SparkRecipes.com recipe calculator for the easy way to get the info on any recipe you plug in. I'm also reposting the recipe in case anyone is interested in it. Thank you Aryiana for sharing this recipe with us! You rock!

 

Low Carb Mac and Cheese   16 oz bag frozen cauliflower
4 oz cream cheese
2 TBS heavy cream or low carb milk
4 oz cheddar cheese shredded
2 green onions finely chopped (didn't add)
1 tsp minced chives, optional (didn't add)
1/2 tsp salt, or to taste (didn't add - cheese has enuf salt)
1/2 tsp pepper, or to taste
2 oz cheddar cheese, shredded

Cook the cauliflower until tender, drain well (at this point I also cut it into tiny macaroni sized pieces).  In a 1 1/2 qt casserole, soften the cream cheese in the microwave about 30-40 seconds on HIGH.  Whisk in the cream until smooth, then stir in the 4 oz cheddar cheese.  Microwave on MEDIUM about 2-3 minutes or until the cheese is melted.  Stir well until creamy and smooth, microwaving a little longer if neceassary.  Stir in the green onions, chives, salt and pepper.  Add the cauliflower and gently fold into the cheese sauce to coat well.  Adjust the seasonings if needed.  Top with the remaining 2 oz cheese and bake at 350 for 35 mins until bubbly and brown on top.

Makes 4-6 servings.  can be frozen

Full fat version:
1/4 recipe 326 cals, 27 gms fat, 15 gms protein 5 gms net carbs
1/6 recipe 217 cals, .18 gms fat, 10 gms protein 3 gms net carbs

Low fat version:
1/4 recipe: 110 calories, 3.2 grams fat, 15 grams protein, 6.2 carbs
1/6 recipe: 72 calories, 2.1 grams gat, 10 grams protein, 2.1 carbs

Oooh! Appalachian Trail hike! Something I'd like to do someday. Not the whole thing, don't have the time but a small piece would be nice.

Made the 'fake' mac and cheese tonight. Not bad considering I used non-fat cream cheese, 75% fat free cheddar and fat free half n half. I also didn't precook the cauliflower, just ran it under ho****er to thaw it then squeezed out most of the water. I like it pretty crispy and I figured that the heating in the oven would cook enough for me. Need to calculate the protein per serving. Will post it as soon as I get it done.

But what if they WANT to be bitten???

I'm having one of those days since I have been up since yesterday morning. 

Don't have much to say -- didn't do anything festive this weekend -- worked Saturday night (yeah for holiday pay), and then slept the rest of the weekend I think. 

Am on a quest for high protein low carb foods that I WANT to eat -- since chicken and I seem to not be seeing eye to eye lately.  Made talipia - may try that tonight... and baked ziti with veggies (ran out of soy crumbles so it isn't as protein laden as normal) - so I may try and pick out the cheese/sauce and eat a wee bit of veggies -- am having veggie withdrawl (versus carb paranoia).

Sorry if I am blathering on..... but the posts seem rather lonely lately and Renee is way too far for me to walk to (altho I guess we could do a hiking of the Appalacian trail and end up somewhere near from PA where I am)....

Hi! All is great here in my part of NY. Thunderstorm right now. Yeah I shoudl probably shut down the puter, but it is the laptop and I'm not plugged into the wall. Got a couple hours of battery left.

Scales are moving here too. Slowly,but moving. I need more exercise too. Maybe I should walk to Renee's! Okay, maybe not, that's at least 2 1/2 hours by car. Gotta get walking again tho.

Renee if you need my help with that glitch let me know.

How is everyone today?  All is well here in NY.  I am back home now AND the scales moved a bit.  I think it was all of the exercise this weekend...hmmmm, EXERCISE???  LOL! 

If anyone out there is reading and wants to do pals let me know!  I have a glitch and I need to fix it.  :-)

My belly doesn't hang quite that low but I plan on having it and the girls taken care of when I get down to goal. I'm not looking for a 'perfect 10' body just one that isn't flapping or swinging when I walk. I definately don't want the girls any bigger, just even and where they belong.

For me this is a self esteem and confidence issue. I have always had low self esteem and I believe it stems from always being overweight. Now that I am loosing weight I am feeling a sense of confidence developing. I am already more outspoken then ever, not the hide in a corner and cry person I used to be when met with confrontation. Men are starting to notice me (something that hasn't happened in a long time!). Who doesn't like that! I know having plastics won't make anything perfect but with a new lease on life because of the weight loss, a new look can't do anything but help boost the ego.

Hi! Today was pretty good except that my pouch is still rebelling from the Fourth of July festivities. Thought doing protein shakes and water would help it but it hasn't. If it's still cutting up tomorrow I will call the doctor.

Topic: PLEASE share - thoughts about plastic surgery

I weigh 331 pounds and I am 5'2. I have been approved for wls and I am getting nervous because I do not know how thin I will get or what my actual body type is. I have the two stomach thing going on where the second stomach hangs touching my thighs. My arms are very flabby. I have had big arms since high school which has been about 15 years. I am concerned about excessive flabby skin especially not knowing how small I will get.

I was wondering if anyone else had a story to share about your weight loss success and whether you have had to do plastic surgery or not, or are considering it. If you have thought about it or have done plastic surgery what was the main reason for your choice? Was it that you absolutely had no other choice due to your own self esteem or because you wanted a totally new start all the way around?

I know that everybodies body is not the same but I am trying to get a general picture in my mind of what my future may hold. Yes I will be healthier because of the weight loss but there are many who are depressed because of how they look underneath the clothes.

Please share.

Hello all. Hope everyone had a wonderful weekend. Mine, not so great. Was at a bbq on Sat night, then got a call saying my mom had to go to the hospital. Well, it is now Monday morning and she is STILL there. I can't believe it. Things are crazy. She just started Chemo last week, now she is in the hospital. Can't seem to win. Other then that, the weight loss is still going steady and things are well with me. My husband comes home in less then 2 months, and I CAN"T WAIT. He has not seen me since the surgery, and at this rate, I should be down almost 100lbs by the time he comes home. What a change. Well, hope everyone has a great monday.

Happy Monday Morning!

I am still out of town but am heading back to Syracuse this morning.  I am going to an information meeting for RNY with my mom.  I really hope she is not too old for them to do it!  :-)

I see that I have a lot of e-mails regarding pals in my in box and I will get to them this evening!  PLEASE, ALL OF YOU should have been in touch with your pal by now and all of you should be responding.  I know it was a holiday weekend so maybe today you can get to it!
