Good question about Easter dessert since that is what I'm supposed to bring and I hadn't a clue! I love coconut, but we have haters in the fam. Carrot cake may be the ticket.

Most carrot cakes contain coconut. But my carrot cake cookies do not.

I was going to buy a carrot cake from Madonna Inn but it's $80 for the size I need! I found the recipe so I'll make it instead. No coconut in the recipe - win-win. It'll be ugly compared though...

Growing up the Italian side of my family would make Ricotta pies with cinnamon eggs and citron. I usually just make 2 cheesecakes one strawberry and the other lemon. Not sure if I'll get to it this year.

Easter dessert here us a white cake with lemon filling, white frosting and covered with coconut. Bunny cake also a good Easter dessert.

No traditional desserts but can you ever go wrong with pie. Just switch it up to more spring or summer innerds (think fruit). How about a fruit pizza (the one with a cream cheese middle on graham cracker crust and a variety of fruit on top)?

Good Tuesday Morning Everyone!

Happy Spring Equinox or for those who know Happy Ostara.

So last Thursday late afternoon I had the weirdest thing happen to me and now I really believe it was the premade food I had picked up at a local specialty store. By the time I got home from work I thought I was going to die.

My stomach hurt so bad it was making it hard to breath. I ended up in the bathroom pretty much all of Thursday night and only worked a half day Friday. Felt a bit better Saturday, but still had waves of queasiness up until last night.

Today I feel fine like nothing happened. I did reach out to my doctor and let her know what was going on just in case it was the medication (which I didn't take F, S, S, and M). She didn't think it was that since I had been taking them for over a week with no side effects.

QOTD: As long as they are not sweet ones yuck, I love pickles. I make spicy garlic dill pickles when the garden gives me good pickling cukes.

B: coffee with raw milk

L: slice of corned beef, sharp cheddar, and Arnold Keto seeded bread two slices. This stuff is pretty darn good.

D: Vegetarian Bok Choy soup (new recipe and pretty darn good)

S: cottage cheese with blueberries

ex: treadmill

Thanks Emiepie. It was the weirdest feeling. Of course, at one point I'm the toilet think yup this is how I die. My German Shepherd keep a watchful eye on me the whole time.
