What's on your Monday Menu?
Here we go Monday Here we go! Perhaps too many softball games for the littlest grand lately?
I bailed out of HIIT again today. I am leaving for the gym in 19 minutes and I will do 1 hour of cardio and the weight circuit and some workout with the kettle ball and squats. I am aiming to press to be ready for next Monday's class without any great increase in leg pain. I need to get back to things and not just walking.
Food was great yesterday. Portions and selections were on my program. All water, all day. I only made about 2200 steps the whole day though. I'd say I was a couch potato, but I was also a favorite chair reading in the sunshine potato and a sitting at the breakfast bar on my computer or drawing potato. Considering it's like 25-30 steps to change locations, you can see why I basically didn't walk yesterday at all. Thank goodness for bathroom trips, I am sure that pushed me over the 2K mark.
QoTD: I got stuck on Bellow Deck for like 2 hours last night. Not my most intellectual choices. I finished reading Did you hear about Kitty Karr? It had some good points, but ultimately disappointing. I started book one of Outlander. I know I'm a gizzilion years behind on this one, but I am enjoying it so far.

Monday, we meet again!
I am happy the weekend is over, it was one of those weekends that I'm happy it's Monday, fresh start of the week.
Has anybody here tried the Brazilian bread? Gluten free and cheesy? I saw it on TikTok and baked it. I didn't have tapioca flour but can sub cornstarch. Don't ask me why I had cornstarch but I did. DH never complains about my cooking or lack of it, and no matter what I cook/bake he eats and says yum. This was the first time when I had him try it he said "not for me" and put the roll down after a bite. I actually laughed because he had never turned down food. I had also thought it would be higher protein and lower carb but after putting it in mfp it comes to 3 grams of protein and 6 carbs for each roll, which is not ideal for us. So I guess no to Brazilian bread.
QOTD: I finished the Marsh King's Daughter, and started the wicked sister by the same author - Karen Dionne. Scary and suspenseful. While in DC DD recommended A tale for the time being by Ruth Ozeki that I read on my way back. I had read black cake and am trying to watch it on Hulu between one thing and another.

- Crab ceviche with quest chips

I've made that bread a lot. If you don't have tapioca flour, you can use cassava flour (same plant - but cassava is the whole plant whereas tapioca is just a part of it). Cassava flour has a stronger, woodier taste than tapioca flour - I prefer the tapioca). I'm not sure how it would be with cornstarch - that doesn't have any taste, really. I like the bread - but it's way better warm than cold or room temp.

I make it frequently and have ever since I worked in Brazil. It?s yummy and you can mix up the cheeses and spices to make it different but would never just do cornstarch, that seems an odd substitution.

I started Black CAke on audible but for some reason didn't enjoy the performance. I have ordered the book from the library to read instead. Heard it is good.

I did drive to the beach on Saturday. It was a total bust, the traffic stopped 3 times on the way there. And then I couldn't get a parking spot at the park I usually go to. So no beach walk, besides there were just too many people. I did get smoked salmon, but the traffic through town was so bad I turned around and drove home. So over 4 hours driving and no beach time. On the way back I had this motorcycle behind me and when we stopped at a light he went into a dance, he was really good and made me laugh. I was hoping he was going the same way because this is someone that I want to meet.
Yesterday was a veg day, I didn't do anything, it was so beautiful out I should have done something.
I need to get back to work.

Bummer on the beach. I love the ocean and beach. Unfortunately, I live approx 300 miles from the nearest beach near Seattle. We do have lots of lakes in my area, some with actual "sand" instead of rocks.
