GooD morning! I love these job updates - it's all so exciting! I'm happy to be a sounding board on the Thursday presentation if you need an ear!

Qotd: barefoot! DH wears socks and the kids are barefoot or with fuzzy socks. We are a shoe free house!

I made a delicious meal of Dijon lemon chicken thighs in the cast iron pan and roasted asparagus and orzo cooked in hone made chicken stock. We have leftovers for probably two more meals each. Yum. So that's on the menu. I also have 1/3 of a Chipotle bowl leftover from Friday that should still be good? And the last of the turkey tacos. So all of that will feature on my menu today!

I'm a cook, not a baker! You'll see why when you see my non-measurements haha.
In a large plastic bowl I stirred together probably 1/4 cup of Dijon mustard, maybe a little less than that of olive oil, the juice of a lemon, salt, pepper, some green seasoning I had on hand, and some paprika for color. Then some onion salt because yum. I put 6 chicken thighs in and got them all coated and let them marinate in the fridge for about 6 hours. To cook, I heated up a cast iron pan, added olive oil and a diced yellow onion, and the thighs. Let them sit without moving to get some color on them, flipped them over, sautéed another 4-5 minutes, and popped the whole thing in a 400 degree oven for maybe 15-20 mins? Can't really overcook a thigh. When I got them out, I added maybe 1/4 cup of heavy cream to the pot and stirred it all together and added a few more squirts of Dijon. It was delicious!

Good morning gang. I had a little trip on Friday and Saturday, just out to Western MA. This is the first winter in maybe 35 years my brother has lived in MA. He was in the navy for 33 years, and recently retired. He invited me to the Red Sox Winter Fan Fest, this yearly event the team throws. It's half panel discussions, and half baseball carnival for kids. It was a lot of fun.

QOTD: This time of year it's mostly heavy slippers. We have hardwood floors everywhere, and no rugs. The floors can be pretty cold. In summer I go barefoot a little more.

Here a picture of Friday night's sports ball discussion. Yup, just listening to people talking about next summers games. It looks more like a Pink Floyd concert.
