What's on your Wednesday Menu?
G'morning all!
QJB - you still have room in your fridge/freezer for all the food that comes after Thanksgiving? I am one of those weird people who gets anxious when the fridge/freezer is too full.
My Thanksgiving shopping is done. DS arrived last night and now we just have to cook. DS back at school has been cooking a lot of Korean food, so he proposed to add something to our Thanksgiving meal. Today he and his sister are going to an Asian market to get the ingredients. Just to show you we live in the boonies, the nearest Asian market is about an hr drive.
Yesterday on my walk I happened upon a convention of shorebirds and Sand pipers. I know it's not pic day but I'll share anyways because they were so cute, and I promise not to post on Friday.
QOD - no unique ones. At my first Thanksgiving here DH's aunt had that jello that JB mentioned. I really liked it and I make it every year. Mine is with cranberry (whole), raspberry jello, crushed pineapple, apple and walnuts. It tasted so fresh and light in comparison to the rest of the heavy food so it is one of my favorites.
My meals yesterday:
- Coffee
- Protein smoothie
- Epic chicken, chomp stick, built churro puff bar
- Left over Meatloaf
- E: 4.5 miles beach walk

Mornin' All!
Took one of the cats to the vet this morning to get his monthly arthritis injection. We've got Thanksgiving lunch at my mom's senior apt complex today at 11:30. Other than that, it's just more cooking (made bread dough and the cranberry sauce yesterday (will bake the bread today). Also today, I'll put the stuffing together and refrigerate it (will bake it tomorrow), and I'll make the sweet potato dish. Tomorrow - turkey and the Brussels sprouts dish. (I did cave and picked up a pumpkin pie at Costco yesterday. I don't mind making them, but it's just one more thing...and at $5.99, they're a deal - not much more than it would cost me to make one myself). Other than that, I need to get some exercise - I'll hit the gym when I can. My weight was up this morning, and the way I've been eating the last few days, I'm pretty sure it's NOT normal fluctuation. Ugh. Will need to be careful these next few days and not make a pig of myself!
QOTD: no - my mom always made the standard stuff. For several years I've made this fabulous sweet potato casserole that was in Gourmet magazine a few years back, but I decided to make another, simpler one this year. I hope it's really good because I'm anticipating some complaints about not doing "old faithful" this year. So in short, I guess my up-until-now regular sweet potato casserole might qualify?

lunch - Thanksgiving stuff (I assume turkey, dressing, gravy, potatoes, some kind of vegetable, and pumpkin pie? (this is the one at my mom's apt complex))
small dinner for sure. Maybe just some yogurt or a salad with turkey slices on it
