Morning y'all! So happy for you Amy! Well deserved!

Not much happening today and I'm ok with that. I figure we'll finish with Christmas decorations. We put the lights out yesterday and some stuff inside. Thankfully she is pairing it down with em this year.

This week is kind of busy. My mom's stress test is Wednesday and I have a phone appointment on Monday. Anywhere from 8am to 5pm. Yeah...that's very annoying. I have to try and reschedule an appointment I had on Wednesday to Tuesday or Thursday. Things used to never happen on Wednesdays but this month everything is lol.

QOTD: what food are you looking forward to the most for Thanksgiving?

I'm trying to stay lower carb this year thanks to the insulin being reintroduced. I'm going to make a healthy-ish lemon cheesecake trifle. I'm kind of making it up as I go but I'm looking forward to it. I'm trying to convince my mom to do some things different but it's not working so far. I'm thinking of making my own cranberry sauce but I'm doubting that will happen just to save a little money. No ham this year. We're the only two who eat it. We've decided to buy a frozen pumpkin pie instead of from scratch. It's cheaper that way and I won't be tempted to try it so much.

There are two categories of thanksgiving people in my family...those that only want the traditional dishes the traditional way and.....me. Lol. We did decide a few years ago everyone picks a dish and we only make those so a lot of the food overload and food waste has ended. My favorite is my sisters holiday mashed potatoes. I could just eat those and be happy

QOTD - Honestly, I'm most looking forward to the traditional mini thanksgiving we will make the day after! All our favorite recipes or adaptations. As far as the family gathering? It's the hot ham and cheese bread bowl appetizer my sister brings. Omg, it's so good. Low carb (but very high fat) if you stick to the dip or use celery as your vehicle. The rest of the food is just okay. I wish my sister would make holiday potatoes like Jen's does!

QOTD: my sweet potato casserole. I could eat it for breakfast and dessert, too. In fact, if that's all I had on Thanksgiving, I'd be fine with that, too!

I usually invite friends from my condo building my Parents and their friends. It?s a lively crowd.

They like soup so I make low-fat lobster bisque ( no one can tell the difference) and one other to have a choice.

I usually make a cornbread dried cranberry n fresh vegetable stuffed chicken ( use a rotisserie chicken to save time ) and a small ham Krakus if I can find it or Boars Head studded with cloves rubbed with spices and baked with apricot glaze ( Saucy Susan lol )

Sides are fat free but buttery homemade mashed potatoes and a stuffed acorn squash and of course the ubiquitous green bean casserole with fresh mushroom sauce and crispy onions. Salad is just home made Hungarian sliced cucumber pickle with paprika.

Dessert is two or three types of home baked Hungarian strudel made largely fat free and very low sugar on the fillings, espresso and tea.

My favorite dish too is the mashed potatoes- I?ve been ? practicing? them assiduously for the last few weeks

Unfortunately due to my Father falling twice and spraining his groin muscle I have to travel to my Parents? for the holidays ( they?re in Budapest ) which means I?ll be either spending Thanksgiving volunteering at a soup kitchen or ( hopefully ) getting invited to a friends home. Or both.

You have to wait around all day for a phone appointment? That's a new and unwelcome development. Hope they get to you quickly!

QOTD- This one is fun since I'm not sure. This year my family has asked for a nontraditional Thanksgiving where we try foods and recipes none of us have had before. I've bookmarked some things and have been sorely tempted to test them but am holding out. So...no idea what we'll have for Thanksgiving. I do like my stepfather's cornbread stuffing. He makes it in bulk, like 10 pounds at once.

Today is a standard weekend day, plus a couple hours of work since there aren't enough hours in work days.

Exercise is 30 minutes endurance. Still have to take some breaks and modify exercises but am making it through. I'm glad we've come to a place where it's okay to do modified versions rather than trying to suck it up and hurt yourself. I did my first yoga class at our retreat last week. It was outside with like 20 people in beautiful weather...and I couldn't do several of the moves, including downward dog. No one said anything. It was great.

Food today has been pineapple crumb thingy, another Mediterranean inspired egg thingy, and will be chicken and pork themed this afternoon. Cheers!
