Mornin' All!

I had a good weekend (except for the fact my MIL went back to the hospital - although she looked and sounded much better last night than she did the night before - the BiPAP machine is doing its trick!. (She has late stage COPD in addition to a million other things - this admittance was due to too much carbon dioxide in her system, though)). My cookbook group met on Saturday to enjoy a potluck of Julia Child dishes, I took a long bike ride (27 miles), and I got to visit some new, six-week (I think) old kittens yesterday! Today I have a Zoom meeting and class, so not as exciting. It's beautiful and warm again today, though, so I'll get out on my bike at some point (might even just bike to class).

QOTD: sometimes I do wish this (like when I'm in heavy traffic), but seriously, I think I would die if this happened. I know we're not allowed to cry - but I would be extremely stressed out!!

Keto Chow shake (sample from the OH conference). 27 grams of protein, which is terrific - but it said to add 1/2 stick of butter or 1/2 C heavy cream (to make it truly Keto, of course). Who would do that? It takes the calories up to 500+. Without one or the other, the mix has one gram of fat and 125 kcal. So I just added a scoop of Quest coconut oil powder (70 kcal). Sounded more reasonable to me (although I could have done without that, too - but I figured the extra fat would hold me over for awhile...but 1/2 stick of butter or 1/2 C heavy cream? No way!)

pumpkin yogurt with 2 T granola

Asian-style salad, some kind of protein (dinner)

I love Keto chow but I made pudding with heavy whipping cream out of mine. It was fantastic.

I'm sure it was - but I'm not sure I could eat a reasonable-sized portion of that!

It's an eternal battle, a small portion of something yummy or a reasonable sized portion of the less satisfying substitute.
