Morning everyone! Late start for me today because... wait for it... I slept until 6am! I was severely lacking in sleep this weekend and I finally feel caught up. Yay!

I have my COVID booster at 10am, then I have a lot to do for the job hunt today before I meet with the guy who offered to mentor me tomorrow, so I need to get going!

QOTD: If you woke up and discovered you were the last person on earth, what would you do (crying is not an option)? Is it terrible that I think I would eat myself into a food coma? Then I would set about gathering up all the cute and cuddly fuzzy animals and we'd take over a beautiful library and set up our new home there.

Accountability: We finally made it to the lighthouse! I had a lobster roll and a Fro-yo. The rest of the weekend was ok, I think.

There was a Twilight Zone episode where the guy was only person left on earth. He was in the library and could spend the rest of his life reading books. But it ended when he broke his glasses and could not read without them.

I remember that one! I am not sure why he didn't go around and try on everyone's glasses and magnifying glasses until he found something that worked. It's not like he didn't have time.

That is my FAVORITE twilight episode. It would be my nightmare; my only saving grace is that I don't need glasses to read.

Good morning and happy Monday and happy OCTOBER! October, wow, that came fast.

QOTD - the world will breakdown fast if I am in charge of maintaining it so definitely look at the perishable foods, make sure I have plenty of wine, drive to wherever I decide I want to be early on before the cars and gas start breaking down.

I had a pretty low key weekend which seems to have helped with this cold; I am still noticing it in my lungs when I worked out this morning but outside that seem to be on the mend. Yay.

I watched an interesting documentary called Savior Complex on Max; I remembered reading an article about this woman who's at the center of it who was a (non-medical professional) missionary in Uganda and was accused of pretending to be a doctor. It was interesting but also maddening.

Busy week ahead with lots of work and lots of personal stuff to get done.

Sadly, I had a plan for the menu for the week whi*****luded italian beef but I went to bed last night without putting it in the fridge so my plan is dashed. I woke up at 2:14 this morning remembering what I had not done, oops. (Yes, I'm sure not everyone would consider it an issue to be out overnight, everyone has different food safety perspectives).

pumpkin yogurt

jalapeno meat stick and salt and pepper cashews

will have to figure out dinner later

I worked in food service for years so I totally get that! I'm weird about leftovers from restaurant too - how long before I can get it in the refrigerator? Better safe than sorry. I've left so many beautiful meals for that reason.
