Mornin' Weekenders!

I stayed in bed until 9:00 this morning (unheard of for me) since I have a massive headache. Must be weather-related? Not sure. I did get up at 5:00 briefly because our alarm cat wanted to be fed, but then it was right back to bed. Sitting up and sipping coffee is helping (I also took some Tylenol awhile ago). Hopefully this thing will blow over soon.

the cookbook club potluck was fun yesterday, as usual - and also as usual, I ate way too much. So it'll be lighter-than-usual eating the next couple of of days. The book we cooked from yesterday was Julia Child's "Mastering the Art of French Cooking". I made apple clafoutis which was great. I may make it again sometime (for a special occasion).

my MIL is back in the hospital. We went to see her last night. I hadn't seen her in three or four weeks (unfortunately), although DH has been going over to her apt several times a week. I must admit, she looked terrible. It was shocking. The issue is that she has way too much carbon dioxide in her blood again, which can cause the symptoms she was having - dizziness, confusion, brain fog, etc. She does use a bipap machine at home, which helps her lungs clear out the carbon dioxide, but she clearly needs to use it for more hours. I'm hoping a couple of days at the hospital on one of their industrial-strength machines will get her back to baseline, because otherwise - ugh. She has really deteriorated.

I'm going over to a friend's house sometime today to see the two new kittens they just adopted. I also may get out on my bike if this headache goes away. And visit MIL again. Otherwise, not much.

QOTD: a few black-bean chips or cut-up raw veggies dipped in hummus, L&F yogurt (sometimes with a couple teaspoons of tahini or peanut butter swirled in if I'm REALLY hunger (the fat helps...), SF Jello or SF popsicles, or a night-time treat: vanilla L&F (or similar brand) vanilla yogurt with about 1/2 T of unsweetened cocoa mixed in, topped with a couple tablespoons of Cool Whip and some raspberries. I have a lot of apples now so I may have 1/2 an apple with a tablespoon of peanut butter as a snack the next few days (fat + fiber from the apple should be good...)

today:

coffee with half & half

protein pancakes topped with plain skyr and fruit

Thai-style salad

Ratio yogurt

Danish bread with butter and jam

maybe a protein shake if needed (for the extra protein)

I'm hoping that's it!!

I have to channel my inner Grim and admit my favorite snack is ham. I made a ham and pineapple pizza for lunch and it turned out delicious. i love pizza with ham and pineapple.
