Glad it was not 6 hour wait but I am surprised of the Covid retractions. I know it is still a thing, but I thought restrictions were dropped awhile back. Glad Mom is doing well and Grim so kind of you to do Dad Duty and get him straightened out. You're a good egg.
Mary, your more than welcome to stop by for dinner anytime. When on vacation no one picked the zucchini, so I got some monsters. 2 feet long. I found out these are the best to make Zoodles with because they are more fibery and hold up really well and do not turn to mush when you stir fry them. I been using olive oil and garlic and after they are cooked, I added parm. So yummy. I needed a filler with little calories, and this seems to do the trick. Today should be a slow day since my biggest account is in the eye of the storm and is closed today. They send a few orders yesterday for processing but other than that I don't expect busy. This is good though I'll have time to go through my mail from last week and process my bills.
QOTD: I use a black roller ball style in a medium point and the brand is TUL.
Accountability: Been eating tons of fruit and vegies to avoid the sal****er taffy and Old Bay Carmel popcorn. Only a few slipped in.

Water and Vitamins: On track. I take a Bariatric Advantage Ultra multi w/iron I use bariatric advantage Calcium chews and 500mg of Magnesium. I also use MiraLAX and fiber in my first coffee of the day.

Strangely, this year my zucchini plants did not produce anything as of yet. I think that the soil I purchased at the beginning of the season was too dense. Next season I need to mix in some above ground garden soil to break it up a bit. However, my cucumbers are growing like mad!

I been making cucumber salad with onions sweet peppers garbanzo beans celery. I put Light Zesty Italian dressing and some salt pepper and garlic on it. I am loving it to snack on instead of the PeanutButter I do not need.

Do you have many cases of COVID in your area? Our hospitals and clinics are not restricting visitors or mandating masks. Bummer on the wasted time but yay you weren't there as long as expected.
My Ethiopian cooking class was more of a cooking demonstration since there was no hands on. However, I did learn a bit about cooking with spices to "open the bouquet" of flavors :-). It was really interesting, even though it wasn't hands on it was very engaging. Plus, we got to eat at the end of it. They served Injera bread, which was a thin crepe like spongey bread, Misir Wat (Lentil Stew) with basmati rice. It was so good. I also found out we have an Ethiopian restaurant in our area that I will need to try. The flavors reminded me of Indian food. Our next class will be Japanese themed at the end of September. Here are a picture of DD and me at the class plus the meal.
