What's on your (PHOTO) Friday Menu?
G'morning all!
Oh boy, hope it's nothing serious and you can get to see your friend.
Last installment of Belize, promise not to talk about it anymore.
After 5 days on the coast we moved inland, up the mountain and into the jungle. The place we chose to stay, unbeknownst to us, was a sort of Buddhist retreat. Cabins on the river with little garden pathways and everybody walking quietly in meditation. Definitely not our vibe but we went with it. To the horror of my kids there was no wifi in the cabins. The only spots with wifi were front office, the restaurant, the bar and the pool. Needless to stay when on property DS spent all of his time at the pool.
We went on several excursions while in San Ignacio: Tikal (already talked about it), Actun Tunichil Muknal Cave aka ATM cave, butterfly farm and Barton Creek cave canoeing.
At the ATM caves we were not allowed to take cameras in, and honestly with water up to your chest walking through the caves there was no way you could take any electronics with you. It's a slippery trail on wet rocks and at some points you need to swim, or go through really tight crevices. I can't tell you how grateful I was to be able to visits the caves without feeling uncomfortable about my size.
To make up for not being able to take pictures at the ATM caves we opted for an additional cave tour, Barton Creek, where you could canoe in. The stalactites were 1/100 of the ATM cave but it gives you an idea how beautiful they were.
The butterfly farm was the icing on the cake and for once a tour that didn't require much physical exertion. We got to see beautiful butterflies, caterpillars in all stages, and humming birds.
QOTD: I'll go with Paleo, but I don't like these extreme diets because I stick with them for a while and then I blow it by bingeing.
My meals yesterday:
- Coffee
- TJ shrimp stir fry
- Fage yogurt w/blackberries
- Left over chicken fajitas
- E: 5 miles wog + weights

I would not have guessed a Buddhist Retreat would have a pool.

They were not advertising themselves as a Buddhist retreat, I called them that because of the whole setup. Little water noises everywhere, yoga deck overlooking the river, garden paths, oasis pool, hammock garden (a corner gazebo with several hammocks), no wifi so you can "unplug", etc. Maybe hippie?

QOTD- Vegan from those options. I would also mourn cheese.
I'm sitting in the lobby waiting to check in for my MRI+ this morning. It didn't strike me until I was walking out the door to ask if I can even get this procedure done when I have a face full of metal bits. I asked about the surgical staples and clamps but yeah, not braces. Google says I can, so we'll see. One of my wires is aluminum-free, so not sure if they can test it before we kick off. Can you tell it's my first MRI?
Only a couple of meetings today and the rest is strategy building and administration. I try to block Fridays for focus projects.
Menu today - fasting before this scan. Have a piece of gluten free feta, parmesan, olive and thyme bread I made last night in the car, plus tea. Then boiled eggs, tuna, cajun baked tilapia, gluten-free cornbread with green chiles, baked chicken piece. Need to defrost some stuff for this weekend.
