What's on your Wednesday Menu?

Well Hello Everyone! Hope you had a good 4th :) So strange that today is Wednesday. It does not have a Wednesday vibe to me. Probably because I did absolutely nothing all day yesterday. I even took a nap! I have been feeling yucky for a few days and I had been working a million miles an hour for over a week, and I guess it caught up with me. Back at it today, I am up early and ready to tackle a to-do list that is a million miles long!

QOTD: Let's do a different type of media round up. What have you read/watched/listened to recently that you DO NOT recommend? I read a book called The Murder of the Century: The Gilded Age Crime that Scandalized a City and Sparked the Tabloid Wars. Meh. It was an interesting story and I could tell that it was very well researched, but it was just not well written.
Accountability: Good, butttt I fully admit that had a total ******g meltdown at 7pm last night. I asked myself if I was "hungry enough to eat a chicken breast?" and the answer was yes, so I heated some up but it smelled "off" so I threw it out and wanted to cry because I was hungry and cranky and had nothing else to eat except for vegetables. Chances are the chicken was fine, and it's just my sour stomach and acid that made the chicken seem spoiled, but I didn't want to risk it. Anyway, I had a 2 minute temper tantrum and just decided to go to bed hungry. I am going to make up some hard boiled eggs today so I can have them on hand for snacks.

I'm sorry about your hangry evening. If you're a mustard person and like heat, sharp Chinese mustard is great on boiled eggs. The party will be here before you can blink! I love the cookies you made for it, and your family will, too.
QOTD- Eh. I struggle with recall and would have to purposefully go look up all of the things again. I can't remember...so I don't have good answers for these media questions. Will try to start a list. Thanks for the warnings!
Lying in bed researching things since the dogs get up with me and I don't want to wake people at 4:30. I do want to get up soon and finish preparing the lamb for roasting since I have to work today. Only one meeting, so that's good. We try not to schedule too many on holiday weeks.
Accountability- Extra soup last night. Chicken noodle but the dogs helped with the noodle part.
Exercise is walking dogs. I'm making a 30 or so minute thing a day as I'm still sore from young dog finally managing to roll and drag me down a hill on Sunday. Stamina is coming! I'm running up and down the basement stairs a bunch because my mom can't and the lamb is marinating in the basement fridge.
Menu today - Leftover charcuterie super pig, chorizo and cheese, leftover bruschetta, leftover chicken in mushroom wine sauce, slices of lamb roast.

That's what we are calling the jamon iberico I brought for everyone to try. It's a special acorn-fed breed of specific pig, which makes it a super pig in my mind!

That are tastier than they are cute. But lamb is a pain in the butt to cook, they have this tough silver skin you have to remove...you need a good butcher, a lot of time or reservations, lol

It's a good option in the rotation if you enjoy red meat. They requested a leg roast to be made. The smallest one they had was 5.5 pounds at Costco. I spent a day marinating it and over five hours roasting for the end product. They compared it to prime rib, which I have almost zero experience with. It was tasty, though!
