What's on your Thursday Menu?

Good morning QJB and menuers,
Your MFP looks so much different from mine! I like that you can put in elevensies. And that meme is definitely me, partially because less money means a smaller item, and I never need a bigger food thing unless it's for someone else. Love your cookies! And walking down memory lane can be such a...fun experience. Just on record to say I think you look great. I know you need to do what you can for you. Man, 500 calories is low!
QOTD- A big apple, spiedies, statue of liberty, Niagara falls...five points? So many niche regional things.
My air is on the fritz again. Kicked on yesterday afternoon and I watched it climb to 87 inside. Supposed to be 105 today so I'll be calling when HVAC opens. Today's working from home and meetings, so pretty standard. I'll get in a bit more cleaning, laundry, and packing things I want to take with me.
I've mentioned the little caviar event I'm doing for my mom. She got it yesterday, so that was fun to see! My step-dad hates such foods, so I decided to do something equally special for him so he doesn't feel excluded. There's a wonderful specialty shop near the office where you can get excellent charcuterie. I'm going to pick up a small sampling of jamon iberico, jamon serrano, and prosciutto di parma. Not sure which iberico they have but it will be something he's never had nonetheless. This event is not cheap bit we'll all be trying new things, and life is short.
Accountability- other half of the watermelon. Today I'm definitely eating champagne mango.
Menu - steel cut oats with fairlife milk and a tablespoon of flax, turkey and cheese on an English muffin, cottage cheese attempt again with wasa cracker, half banana, dill teiscuits, thinking about coconut poached tilapia with spinach but it will depend on the heat.
Have an excellent day, everyone!

That's what MFP looks like from the desktop instead of app. And what macros you track and your meal names are totally customizable in the settings :)

Caviar! A friend ordered a tasting last week and insisted I must sample everything. I think I like the ritual more than the caviar. It was really nice to experience.
What is the coconut poached tilapia recipe?

I bet that was a fun experience, though! That's part of why we're doing it. At least, that's why I am. Trying new things with fancy little spoons and accoutrements. No vodka, though!
Base recipe for poached fish below. I'm only making one piece, so halving the rest of the recipe. Using tilapia and spinach since that's what I have. Brown sugar substitute, very little oil for crunchy topping or skipping that part. Powdered lemongrass. Light coconut milk, one of my many Indian chiles, probably. I love, love ginger, garlic and lemongrass so I'm excited to play with this recipe.

Good morning and happy Thursday, even though I thought today was going to be Friday when I went to bed last night. It's been a long week, apparently....or maybe I'm just excited to see Sheila on Saturday...or both!
Lighter meeting day today and then a rescheduled workout with my trainer so a pretty low key day for me.
QOTD - Pikes Peak, The Continental Divide, Trail Ridge Road, The Royal Gorge, & Red Rocks, but I'm not sure you could cookie those! The state dinosaur/fossil is the Stegosaurus, the state flower is the Columbine, State Bird is the Lark Bunting, the state gem is the Aquamarine, and the state tree is the Colorado Blue Spruce.
I admire your discipline as you party prep; I realize I have done nothing to have a good plan of attack for meals today.
Have a wonderful Thursday everyone!!

Good morning - Adorable cookies! WTG on the MFP. I'd be lost without it now but when I stopped using it for a while back when, that is when I gained most of my weight. I slept incredibly well last night and didn't want to get up today. A good day at work yesterday and another busy one on tap. The week is flying and I can see the weekend - can't wait!
QOTD - Sunshine, palm trees, beaches, poppies and WINE!
Accountability - the last of the strawberries w/cream
B- coffee, HB eggs
l - tuna w/light mayo and balsamic, celery sticks
d - chicken shawarma with greek salad
s- Qukes w/tajin
Have a great day!
