Good Morning to you and the Weekend!

wishing all the Fathers a Happy Father's Day weekend. I live in Spokane WA where Father's Day was created by Mrs Dodd! Our plans with DH were changed as it turns out he is working. Every 6-8 weeks he has weekend duty to see patients in the hospital. So he is on the "hook" from 7am until 5pm at the hospital. Bummer.

Today me and kids will probably go to a m. The Blackening. A horror movie with comedy. It got good fan reviews and the trailer looked funny.

QOTD: when eating a salad do you stir (mix) in your salad dressing or dip your fork into the dressing to get some flavor. I am a mixer. Need to make sure every bite has some salad dressing on it. I also cut up the salad so I have bite size pieces of lettuce. I hate trying to get a whole head of lettuce in my mouth when the leaves have been torn small enough.

Mornin' All!

I haven't checked the weather yet, but from my bedroom window, it looks like another terrific day! I might go to a memorial service today at 2:00. A former co-worker of mine's husband committed suicide last summer, and they're having the public memorial service today (they had a small, family-only one shortly after he died). I think it's just taken them a lot of time to come to terms with his death, and that's totally understandable. I only met the husband once, I think, although I worked with the wife for about two years - but not closely. I doubt I would be missed if I didn't show up, but on the other hand, I'm sure it'd be appreciated if I DID show up. So I'll probably go. Beforehand, we need to get DH another bike helmet since the strap on his broke yesterday. He stopped by a bike store on the way home, but all the helmets were around $100 and up, so he left. He's a very casual (and not very frequent) rider, so he may be fine with a $30-40 one - but we'll check around and see what's available.

QOTD: if I'm home, I mix it (well, not really mix it - but pour some on the top and let it drip down - although I guess I do mix it at least a little so it's more uniform throughout the salad). But then, I use either very low-cal dressing or make my own (also low-cal). If I'm at a restaurant, I ask for it on the side.

B: protein shake, coffee with half & half

MS/early L: hummus and tomato sandwich

AS: if I go to the service, probably nothing. Otherwise skyr/yogurt and berries

D: leftover zucchini/lentil dal

I bought dal today and thought of you. Walmart had a split pea, spinach and coconut one and a butternut squash, pumpkin, and coconut. I like them both, so of course they're now on clearance. I'm going to try and come up with a similar recipe.

I dipped for years, because that is what Weigh****chers told us to do. Now I put my dressing on and toss it well. I also want bite size pieces of lettuce and cut it if I need to, but my Italian sister-in-laws told me that a knife should never touch lettuce, so I tear it when making a salad on my own. Recently I was served a salad at a restaurant that had the heel end of the lettuce. That would be a major sin in my husband's family. I just took it out of the bowl and set it aside.

My in-laws also had a ritual with the cucumber where they cut off the ends and rubbed the cut off pieces on the opposite end of the cucumber to remove the bitterness from it. That actually works and is now a "thing" on the internet where people demonstrate how to do it. They also peeled the cucumber and used a fork to score before slicing it up.

Interesting.

I peel the cucumber skin to reduce the amount of fiber.

BTW: ceramic knifes work great to cut vegetables without causing oxidation. Works wonderful on cut avocado, or apples. I've got a bunch of ceramic knifes. I have to hide them at work - people steel them or break them. Ceramic knifes chip easily. Plus they need to be washed by hands. At home - Keith is as careful as I am with the knifes. I have a good knife sharpener that works with SS or ceramic knifes, "removing" the chips.
