Good morning Mel and weekend menuers,
I've been kicking around a bit since sleep didn't happen last night. I was at the bank at 6am, did my shopping and got home just after 8 before the rain.
After a bunch of back and forth with the GI office yesterday, I confirmed that last week's CT scan was abnormal. I'm now scheduled for a colonoscopy and follow up EGD on the 27th. Based on what I pried out of them, it appears there is indeed something going on in my guts. For an unknown reason there's a motility issue from left to right. Left side is backed up and right side has fluid. This absolutely tracks with my communication of symptoms...and I don't want another blockage. Trying not to worry too much but I have a list of questions to call back with Monday. They were not very forthcoming.
In other news, I'm doing my first seafood boil today! I picked up a small cluster of crab legs in another first...have never been able to crack them. I'll have shrimp, that cluster, and a small lobster tail. Very protein-forward. Maybe toss in andouille sausage. Was a good seafood sale...$10 for the crab and lobster. Shrimp is in the freezer. Looking forward to this!
I'm just focusing on that today. I chatted with a friend for a couple hours. Now I'm going to make a fancy cup of tea and prep for lunch.
Accountability- I did good yesterday. Eggs and sausage for brekkie, chicken medallion and spinach salad for lunch at the meeting, protein chips, matzo ball soup that I'm mainlining. Mmm.
Exercise- I want to spend some time on the recumbent bike today even if it's just puttering along. Movement is important.
Menu - crab cake with homemade remoulade for breakfast, seafood boil for lunch, leftovers of all things including matzo ball soup. Gotta clean out the fridge.

I can't believe I slept for over nine hours last night! (although I was awake for about an hour from 4:00-5:00 because the cat was screaming that he wanted out of the bedroom (he sleeps there - with the door closed - because one of our other cats picks on him) - but still, the total was just over nine hours. I don't even remember the last time I slept over seven, let alone nine! I evidently needed it!
I have a Zoom meeting today at 2:00, but that's it. I need to get out and walk or bike, though, because I'm feeling like a huge blob. That's what three days of restaurant eating will do to you. I didn't gorge - but I ate c. 300 more calories/day than I usually do, and it's caught up with me. I don't like feeling this way!! So light eating is on my docket for the next few days.
QOTD: only twice that I can remember. The latest was a year or so ago when some store (Walgreens? CVS? Costco? Can't remember) had a fantastic sale on Miralax (or more likely, the generic equivalent). I bought about six bottles (the large size). The cashier said that should last a lifetime, and I said no, probably two or three months. I wish i'd had a camera to get a picture of her face. The other time was about 10 years ago when we had a cat who had cancer and was on chemo. The only thing she would eat was salmon. Human-grade salmon. And because I had to cut it into small-ish portions and therefore had to freeze a lot of it, it couldn't be pre-frozen salmon - I had to get it from a fish market, where most of their fish was fresh. Since it was kind of hard to cut through the skin, on this particular trip, I asked the guy at the counter if he could cut the salmon into 2"x2" squares. He gave me a really odd look, so I said "it's for my cat". He looked at me even weirder. I said "she has cancer - this is the only thing I can get her to eat". I think he finally understood...but I'm sure they laughed about that over at the fish market for a few days...

L: ? Maybe chocolate "mousse" if i can make a fruit compote before then (I like that on the top). Otherwise, maybe a protein muffin

D: maybe the Loma Linda taco filling with tomatoes and plain Greek yogurt that I put on here at least a couple of times but have yet to get around to eating

To easily get skin off of a piece of salmon, boil a cup of water, put the salmon on a dish skin side up. Pour half the water over the salmon skin and then quicky drain it off the plate. Then do it again. You get rid of the water quickly so it does not poach the salmon. Once you do that then grab a small corner of the skin and it will peel off easily. I always remove the skin that way before I cook my salmon.
