I think each piece of ribeye is like a child. Even when they're bad, there are still redeeming factors and wonderful at heart. When they're good, you want to brag to friends. I've run across steaks that are deceptive. The marbling is great, the color is great, the butchering is great, the temp of perfect, and the steak ends up mediocre. I've come across this more at the Jewels(Albertsons.)

Agreed. I can always tell when one won't be good. But some that look good aren't.

Wildfire def has good prime rib. I went to Tom's Steakhouse in Melrose park last summer and that was a tasty piece and good atmosphere. Gene and Georgetti's? Carson's has a fat slab of prime rib. See pic.

We used to eat at Ponderosa when we visited my grandparents as kids. I remember it being a buffet place. Do they even exist anymore?

There is still a Ponderosa down the street from me. I used to belong to a group that went to a different restaurant for dinner every Monday evening. One of the guys always picked Ponderosa when it was his turn to pick. The food was surprisingly good.

I was being facetious. Ruth Chris and Moton's are more of Jim's style. Very Up scale and noteworthy. Ponderosa is a lower end steakhouse. I'd be surprised if Jim has ever been to one.
