What's on your (PHOTO) Friday Menu?

Good Morning and Happy Friday everyone! Happy St. Paddy's Day, too! My hands are continuing to improve and I hope to be back to be able to make a fist and punching people soon :)
Yesterday we got some recommendations from friends and read The NY Times WireCutter reviews and took off to Costco to buy a mattress. Grim somehow managed to get the old one off and out of the house on his own, plus get the new one up and on the bed by himself, so we already slept on it last night :) It was a little firmer than I am used to so it will take a little time to get used to, but it was comfortable!
Tonight my cousin is coming over and we are attending a Zoom gender reveal together for our niece! She is having the first baby of the next generation and we are so excited!
QOTD: Kiss me, I'm Irish! Are you? What nationality is your family? I'm a little bit of everything. I am Irish, French Canadian, German, and Scottish on my mother's side. And Scottish and Mexican on my Dad's side! Funny because I carry a very Spanish last name, but it accounts for very little of my actual nationality, but since it falls on the paternal line it's what people assume about me.
Accountability: Well, after my protein coffee, that was the end of the "on track" portion of the day :(
Pics are a few sets of cookies I made this week.
B: Protein Coffee & Egg Bites
L: Veggie Burger & Naan Bread
S: Greek Yogurt
D: ?? not sure if we'll have my cousin with us for dinner or not?

Good morning QJB and menuers!
It's my third Friday of the week! Woo! Just glad to be here.
Yay for new mattresses! That's impressive wrangling, Grim. I can't even get mine off the bed alone anymore! Glad you're feeling better ish. Ans as always, love the creativity in your cookies.
QOTD- Yep. Irish is the highest traceability in my DNA. I've taken 23 and me and Ancestry tests and they both agree, to the point where it shows where in Ireland my ancestors come from. I've also got English in a major way and then a mixed bag of Scandinavian and bits of western Europe. Not much diversity in me, sadly.
I'm working from home today, and it's definitely a wind chimes and snobby tea day. Yesterday I booked my travel for DC in April and New Orleans in June. It's a bit of a process since I have to board the dogs. I'm also researching a trip I want to take this year to south America. More to come, there.
Also have my PCP follow up for lack of energy and brain fog. I'll take them copies of all the bloodwork I've had done since last year with my WLS clinic, and my InBody scan. I just realized I didn't get a paper copy of my January results.
Accountability- I bought a little corned beef brisket for today. Will give that a try for the first time since it's st. Patty's day. It will probably include a potato, which I love.
Exercise - Elliptical today. Need to keep it moving.
Menu - Vanilla ratio yogurt, flavored tuna packet, boiled eggs, corned beef, last of the clam chowder, maybe a Thai chicken serving. I've been ravenous.
Pics are of my buddy keeping me from working, part of the clam chowder prep, and my very focused pups when I stopped to get them a custard pup cup. They were pleased. Happy Friday, everyone!

He's chock-full of personality, that one. There are days when I can't stop laughing and days I want to strangle him. Fortunately, the former far outweigh the latter. Doesn't help that when I get the contagious form of laughter, he thinks I need rescuing, which only exacerbates things. Highly recommend the company of happy dogs.

I'm pretty sure that's the same level of intensity in which I stare at someone with a treat, too!
They are precious. This is not my cookie, but I bought the cookie cutter, so I will be making this corgi butt cookie some time soon :)
