Good morning QJB and Menu Friends! Missed you all yesterday, work got in my way, it happens sometimes. Work has gone well under the new ownership group. I am responsible when our VP/GM is out of the office, I was honored to be asked as there are many that have been here longer than I have, she feels I have knowledge and demeanor to handle the day to day issues that arise. Fortunately there have been no crazy issues that would involve HR, I can handle the Manufacturing type issues...LOL.
Ryley is on a Flight over NC at the moment, flying home from my folks, we were worried that he would not make it out today, we only had about 3" of snow overnight, crises averted.

Crock Pot Pizza Casserole recipe will be at the end of my post

S - 2 good yogurt
L - Guess?? Salad , chicken breast and G hughs SF dressing
S - celery and laughing cow
D - Leftover Pizza Casseroe

Crock Pot Low Carb/Low Fat Pizza Casserole
- 1 lb uncooked 95 to 97% lean ground beef or ground Turkey
- 1 tsp garlic powder
- 3/4 tsp salt
- 1/4 tsp black pepper
- 1 tsp dried oregano leaves
- 1 tsp dried basil leaves
- 2 cups cooked riced cauliflower
- 1/4 cup fresh grated parmesan
- *2 cups RAOS or Trader Joes Organic Marinara
- 1 and 1/2 cups reduced fat shredded mozzarella cheese with
- 2 oz turkey pepperoni slices, divided
Brown Ground beef or Turkey with Garlic Powder, Salt and Pepper
Add cooked ground beef to crock pot
Add Riced Cauliflower, 2 cups of marinara, ¼ cup of parmesean, Oregena and basil, 1 oz of turley pepperoni cut into quarters.;
Stir ingredients together and top with 1 ½ cups reduced fat mozzarella and 1 oz of whole turkey pepperoni slices.
Cook on Low from 4-6 hours. ( I always do 5 hours and we let sit for a half hour plus prior to eating)

I like the crockpots you can sauté in like the Ninja. My Instapot has that function also. I hate to use multiple dishes or pans to make a recipe, so the crockpot sauté option is great.
