What's on your Monday Menu?

Good morning. I'm making it through the days in fairly decent shape. Friends invited us to dinner last night and it was lovely. Food was amazing but I limited myself on volume. Wish I made the same choices about wine, but I did not. I'm up three pounds this week. I have however been successful in continuing to exercise. Just back from HIIT class, did yoga and weights yesterday and the stairs on Saturday.

I keep breaking down leftovers and freezing them in portions for Roger and I and sending meals home with my Dad for his freezer too. Today I am roasting us a turkey so I can have some turkey leftovers. Last night was brisket and Christmas Eve was bacon stuffed prime rib. I've got to turn the corn bread into croutons today so I can make stuffing from them, I made some cranberry dressing already and I think I'm just adding a salad. I really need to work on cutting back on carbs, so I am going to make that my focus in the coming weeks. But oh my gosh the left over lasagna in the fridge is so good. I need to get Roger and Dad to eat it for lunch so it's gone!

QoTD: Neither. I am more of a "I'll sit in the lodge sipping hot chocolate and watch you ski from the windows" kind of girl.

Menu:

B: leftover insides for stuffed bell peppers with cottage cheese. I used black beans instead of rice when I made it, so the carbs are good carbs.

L: piece of meatloaf and small salad

D: roasted turkey, salad, small bit of stuffing, gravy and a scoop of cranberry sauce.
