Ok hello Monday. I had a fun busy weekend. it ended with me gathering up supplies from my moms house to can spaghetti sauce. You know I have a freezer on order since the beginning of August that is still on backorder. I have this freezer dilemma since all the vegies are ready to be put up. I never was a fan of canning. It is such a pain but I put up just 5 quarts of sauce since I have no where else to store it. My hope is I do not end up with botulism. The internet really scares you that you may have not done it correctly. Yikes.
I also am driving a rental since my car may actually be being repaired. I am hopeful for a good outcome, however no matter what it will take a lot for me to buy another Ford.

Accountability: To many wines and carbs. I stopped following the rules and I am planning to get back on track starting today. I have to get back to 145 for a normal BMI so that's my goal. I am going sober till I meet up with you guys at the conference and I am going to walk in the mornings starting tomorrow.

Exercise: Not today I have to close the pool tonight but I plan to walk tomorrow.
Water and vitamins: On track. I take a Bariatric Advantage Ultra multi w/iron I use bariatric advantage Calcium chews and 500mg of Magnesium. sublingual B12 1x a week I also use Miralax and fiber in my first coffee of the day.

Did you pressure can or water bath the sauce? Lower pH values of what you are canning makes the difference as to how you can them. Anything vinegar or a pH below 4.6 is OK to water bath as that is acidic, if the pH is 4.6 or higher you need to pressure can it to prevent botulism.
I have no idea. I did cook it down for awhile hoping it killed any bacteria then I used a water bath I do not have a pressure canner. They did all seal. I did throw in baking soda to lower the acid. Yikes I may have screwed this up.

I'll be honest by lowering the acid and not pressure canning them I would use them up right away like within a couple of weeks if that. I definitely would not store them long term. Just because they sealed means nothing if they are not processed correctly.
Clostridium botulinum spores can survive boiling water (212 °F) and grow in a sealed jar of low-acid food. The spores can change into the vegetative cells that produce the deadly botulinum toxin. You must use a pressure canner to raise the temperature to the desired 240-250 °F to destroy the spores during the canning of low-acid foods.
Now if you had added say some lemon juice instead of the baking soda then you could have jus****er bathed them as the lemon juice would have made it more acidic.
QOTD- I tend to go with Greek yogurt and a fairlife sugar free mocha.
It actually rained yesterday, of course I had to go rescue my laundry off of the line. I probably could have left it but it did rain enough to get the pavement wet last night, and I didn't need to water my plants this morning.
We are having more normal weather the temps will only be in the high 70's and the rain is coming on Friday and for the weekend. Winter is coming, and the days are getting so much shorter. It is dark before 8PM now. I used to dread this time of year but honestly without A/C it's not bothering me.
It's funny all of the things that I missed in Hawaii: squirrels, raccoons, crows, Canadian geese, hummingbirds, finches, hawks, vultures, large conifers, owls. Things that you don't even think about until you don't hear them or see them anymore.
My kitchen, dining room, and living room are now box free! Yeah! I wish I could say that for the rest of the house. But at least I don't trip over boxes in the kitchen. We got some shelves for the garage and hopefully we can clean it up and actually get our cars in there before winter.
My Ducks are back in the top 25 at #25 but they won! Tonight I will torture myself with the Seahawks game. I watched the Chargers beat the Raiders yesterday. I have to keep up with Justin Herbert since he is a hometown boy from Eugene and played for the Ducks. I wish he played for Seattle, but it probably wouldn't help.

I'm sad he left Seattle, but I understand why. He's a really good quarterback but he hasn't been protected and wanted more control of the offense. As a rule I hate Denver because they used to be in the same division as Seattle, but now I don't know. I wish him luck.
