CINNAMON MUFFINS


These are very low net carb muffins, mostly fiber, Very filling , I eat only a half of one. Drink lots of liquid with these.

1 cup Golden flax meal

1/4 to 1/3 nut flour, (coconut, almond or hazelnut) I use coconut flour

1 T baking powder

2 T cinnamon

1/2 teaspoon vanilla

1/2 cup of sugar sweetener power equivalent

1/2 cup melted butter or other oil

4 extra large eggs (or 5 small eggs)

1/2 cup liquid, I use water

Beat together, add liquid if required, to make very thick muffin batter.

Spoon into well greased Muffin TOP Pan. bake at 325 to 350 for 11 to 13 minutes. Do not over bake. They will be moist. You can top with pecans or other nuts if desired.

High in fiber, flax meal and coconut flour are mostly fiber. Be sure to drink lots of liquids while eating flax. These will keep you regular!
