May the Fourth be with you! What's on your menu plan today?

Happy Star Wars Day!! May the fourth be with you! (and if you are not a Star Wars fan, AT-AT is kind of like a camel!)
This is one of my favorite days!
I hope everyone is having a good week; Tuesday was a little annoying but I have lots to keep me busy today and then tonight a concert. It's going to be cold, high 30s by showtime and rain/snow called for but no lightning so all will be good. Good times, good friends, good weather might have been pushing it a bit far this early in the season, lol.
I also need to do my PT and get in my workout this morning so I will do that. The current "what on earth is he thinking" exercise is elevated, piked, shoulder taps. They are hard. I had a bright idea over the weekend for just the elevated pikes -- I put my gliders under my hands...and it was awesome walking my hands in to go into the pike....not so awesome going out but pretty funny. I'm not going to tell my PT about it because I'm afraid he'd make it an actual exercise.
QOTD - does your car have a name? What is it? I don't name my cars but my sister's family, every car has a name -- my old Pontiac vibe that they have is called zoom-zoom, lol.
my menu today is
breakfast sausage and biscuit
Korean fire chicken
Bunless burger or green Chile
Have a fantastic day everyone!!

Good mornin Jen and thanks for getting us started.
Yesterday didn't go as well as I had hoped. I have to jump through some hoops before I get a referral to a new neurosurgeon. They also seem to be stingy with pain meds. I clearly don't abuse these damn things but yet they still treat me like a junkie. I'm off of methadone and back on hydrocodone which never helped all that much either. Destroyed the methadone at their office. I am emotionally drained and just sitting in disappointment. I have a lot of phone time planned for today to try and get it figured out.
No big plans for the day.
QOTD: nothing here!
B: cheerios and coffee
L: ???
D: ???
S: yogurt, cheese and maybe a pear.

Thank you! I am basically steaming. I got preached at that I should trust what my "highly trained" neurosurgeon says. Even though he obviously doesn't give a **** His NP went on and on. I wish to god that my mom hadn't mentioned this avenue. I get why she did...I don't want to travel either but damn.
The nurse is going to see what he'll say. Even though the outcome will be the same I'll get shamed again.

G'morning all!
JEN! I made your Korean fire chicken last night and it was a hit. DH went back for refills two more times. I made two minor changes :
- I couldn't find Gojujang paste (went to two different stores but no luck) so I used Italian bomba that is a spicy Italian chili paste. I always complain to everybody else not to mix cultures/cuisines but it was a moment of emergency and dire need.
- I put the chicken in the broiler for about 5-7 minutes after it was done in the crockpot. It came out looking like at the restaurants.
Thank you so much for this recipe, it has entered our rotation and will stay there.
May 4th is my 29th anniversary of arrival in US. I always knew the force is with me, because I came to US on such a great date. I had been here before for vacation and grad school but on May 4th I came to stay for good. And I'll share one more fun fact with you. As a European citizen you could stay in US for 6 months without a visa, but after that you had to leave. So DH and I went to Tahoe and got married (just the two of us) in order for me to be able to stay until our wedding in Aug of the next year. My family knew about this, but his family and all of our friends didn't know. So when we got married in church we had already been legally married for almost 10 months.
QOTD: my car is "red", not very imaginative. My son has named his van Lucy, and yesterday he texted us Lucy passed her test after being smogged. I thought it was cute.
My meals yesterday :
- Coffee
- Egg bites & cauliflower thins
- Jello, chomp stick, epic chicken, Fage yogurt
- Korean fire chicken
- E: 3 miles jog (I'm still paying for my hike)
Happy hump day!

oh, I'm going to look for that chili paste! Funny that you did the broiler, the original recipe that I modified was to broil it at 450 for 20 minutes!
