G'morning all!
It's not Friday but I thought this pic was worth sharing. The sky above DH and his buddy, who is staying with us, was really neat.
QOTD: Rose: all is good in my world. I don't take it for granted, hence I appreciate every minute that no major fire needs to be put out. Thorn: I was on a risotto roll last night and ordered a salmon risotto. Very disappointed and after two bites I put the plate next to DH. He ate it all!
My meals yesterday :
- Coffee
- Epic chicken & PP coffee
- Fage yogurt w/blackberries on top
- Roasted Brussels sprouts, few bites of Salmon (skipped the risotto)
- E: cardio & weight

I read an article the other day about food that's popular on the Amalfi coast. It mentioned risotto made with lemon and ricotta - it's on my list! So is limone delizia (and of course, gelato is popular everywhere). I'd better do a TON of walking and stair-climbing, or I'm going to come home 10 lbs heavier!!!
I noticed in Italy I actually lose weight. The portions aren't as big and you automatically walk a lot more than here in US.
Gelato is def the best. I hadn't heard of risotto with lemon and ricotta, but it's gotta be a regional thing, or maybe a summer thing.
I love risotto and always try at Italian restaurants to see if they make it the way it's supposed to be, but most of the time I come away disappointed...but I never give up on my quest for perfect risotto in US!

We should make a trip to one of Tom collichio's restaurants. He is savage about bad risottos on top chef so I bet his is good but would love your experienced palate opinion!

Hello Menu Friends
i am still in my hometown since today is my FILs funeral. We held the vigil service last evening which turned out beautiful. At age 95 there was a good turnout since many of the people he knew as friends have already passed. He is the last of his siblings to die.
QOTD: thorn- I maybe a bit tired and sensitive so have snapped at my son and dtr a few times ( they are teenagers and can be sarcastic at times). Sometimes it seems I can't do anything right according to my son. Can't wait until he "doesn't know everything better then everyone else". ROSE: beautiful vigil, I gave a wonderful testimony of how important my fil has been to me.
my eating can be more on target. It has been a little loosely goosey with all the family events. I will be trying harder starting tomorrow but will make good choices today since meals are tbd.
will try to get exercise in after the funeral and reception today.
