What's on your Monday Menu?

Good morning, Menu Pals! I hope everyone had an amazing weekend. Mine was nice. We were iced in for 2.5 days so I just baked and decorated cookies for most of the time. I also did a little organizing and a little work, but mostly cookies, haha. Here is one of my sets based on the Disney movie, Encanto. Not great, but I love the colors :) I am giving then to my coworker who has an Encanto obsessed kindergartener.
QOTD: Is anyone watching the Winter Olympics? I haven'****ched a second of it, but I have been reading about that poor Chinese skater who fell. Poor kid!
Food wa**** and miss this weekend. I was mostly on plan except that I added a few too many pieces of found Christmas chocolate (!!) and too many drinks. I am not going to try to commit to a dry month, but I definitely will try to cut back--too many glasses of "just because" wine, lately.

Good mornin JB and everyone. I think those cookies are fabulous! So so good!
My weekend was ok I guess. I made taco stuff for my birthday dinner with my brother and his family. Thankfully I didn't have to make them a dessert. I did make some jello/yogurt whip stuff for me. We had bought some cookies and I'm proud to report I didn't have a single bite. I was really sore yesterday so having to clean and stuff made me hurt more so. My actual birthday is Friday and I may get some Thai food then...honestly probably not. I can't do noodles or rice. Who knows. It'd be nice to not have to make my own birthday dinner though. No big dessert for it though...I may make some of the jello whip stuff.
Lots to do today. We have to pick up the kids and I have to go this time. Lots of sitting equals lots of pain.
QOTD: so no****ching. I rarely ever do watch the Olympics.
B: JUST egg cup and coffee x2
L: PP shake with a small banana
D: PP blueberry and oats shake
S: jello/yogurt whip and ???

Hi folks. Our day took a dark turn. My uncle is back in the ER at the VA. It's really looking bad. He has nodules in his lungs, spots on his liver and is retaining fluid badly. He usually is a string bean...his legs are greatly swelled and his belly is VERY swelled. His blood count is very low so they are talking about a blood transfusion. His WBC and RBC are way off. He had a PET scan Friday and they don't have the results yet. My mom's training as a nurse is weighing heavy on her. She was able to see the CT scan read out. They weren't even told about the lung nodules.
I'm just so sad guys.

Good morning everyone and happy monday! I am very much looking forward to the back to back meetings from 7 am to 3 pm that I have ahead of me. Yay monday.
Had a pretty low key weekend, got a few things done; tried a packaged grain free pizza crust that was horrible (Stellar is the brand, do not recommend).
A friend recommended a series on HBO called Somebody Somewhere and I started it this weekend; very good; it's marketed as a comedy and it has humor but I think it's more a slice of life with all it's absurdity. I like it. I also watched all 8 episodes of Reacher; I used to read all the books and then I missed one and Lee Child/Andrew Child come out with so many that missing one just got me off track. I don't remember all of The Killing Floor which this season was based on but it seemed pretty good. This Reacher has the looming presence that the short scientology dude never could pull off.
QOTD - nope and I haven't even read about them either
Have to jump on the elliptical as soon as I finish this cup of coffee (Amy, I have ended up doing the whole Snowdonia series, I'm on 11, and have been researching hiking trips in Wales now) and then get to work.
Menu today
coffee plus half and half X 3
pb toast
cheese and pepperoni
either taco fixings (if the ground beef defrosts) or peppadew peppers with mozzarella balls
protein hot chocolate
Have a magnificent monday everyone!

I am seriously impressed with JB's cookie making and decorating skills and Melody's Chainmaille creations. Such wonderful art.
I had a decent weekend. I was finally about to get out of the house and resume my daily activities. I spent time with family and didn't make completely horrible eating decisions. Yesterday, my family picked up from a breakfast place and I had an egg, a 1/2 cup of corned beef hash and one potato pancake. I also took some time for myself relaxing at Starbucks for an hour.
QOTD: I haven'****ched any Olympics yet besides highlights. I also feel bad for that young girl from China and the scorn she's receiving.

L: Chicken Salad.
D: Greenridge Farm Ham and Provolone roll up.

my sister makes the best mashed potatoes and as a side effect of that also makes the best potato pancakes; I only have the potatoes at thanksgiving and the potato pancake the day after but I might dream about them occasionally through the year:-)
