I would just beat the eggbeaters with some cottage cheese and seasonings (sometimes adding in green/red peppers that I brown in a skillet). I pour into a 13X9 dish and bake at 325 degrees for about 30 mins or so. It's been forever so I need to make some soon.

QJB- Sorry that you're still dealing with vision issues and the Lasik doctor isn't on top of that.

I'm having a pretty relaxed day. I only have one appointment at 3:30 and, at some point, need to address Enterprise and file an accident report. I have ten days from the date of accident for the accident report so I may put it off, depending on how I feel.

QOTD- coordinating health care for my father and making sure he has full care when he returns to his independent living.

Happy hump day! I do wish this week was going a little bit slower, lol.

qotd - some shipping issues which actually aren't a big deal, but the failure to communicate about it really frustrates me.

Mernin' errybody, Happy Wednesday!

QOTD - Amazon, but that's just because they are run by an evil billionaire. No specific complaints, just that they are a necessary evil I use as little as possible.

Breakfast - coffee

Lunch - no idea, but will be grabbing something out. Yesterday we had Greek, and it was the most delicious thing I had eaten in a while. They did a Beyond patty in a pita wrap, but they seasoned it so well, it was just, fantastic. I had that with fries and a Greek salad on the side, it kept me full almost all day. I wish I could eat that again today, but hubs will definitely nix that idea. He isn't a "eat the same thing twice in a row" kinda guy.

Dinner - last night, I went against my better idea and had pizza toast (homemade) instead of tofu scramble because I was being lazy. Should have done the scramble. Tonight, I will have the scramble.
