hi all
QOTD: we usually get together with my side of the family. My mom and sister have had it already, and everyone but kids are all vax. Some of the older kids are. We planned on doing my moms day after christmas this year, which means i have friday, and saturday to do NOTHING if i want to. We are having breakfast both mornings, going to try out carbquick for biscuits for DH and bacon. he has been watching carb intake since he is prediabetic which really means he eats more like me. Saturday I'm making rack of lamb which i need to figure out how to cook because I've only had it outside of the home. I would also like to do a healthier pumpkin pie or something yummy for DH like that.
Last night I made a healthier banana bread with carb quick, truvia brown sugar, bananas, and some veg oil and eggs. turned out ok but next batch needs more spices or sweetener?
Food plan is more leftovers cause that's how I roll

Make sure you remove all the silver skin on the lamb; it's the shiny connective tissue and it's pain. That is the only thing I took away from a cooking class where we made lamb, lol

QOTD: We are planning to have my MIL over on Christmas morning. We are all vaccinated and boosted (Em just got hers yesterday) but it is still hard to feel like it's ok.
