Good morning!

Love today's meme, and it fits so well with the only non work related picture I took this week. I present to you my cranberry cornbread!

I am off today and we have to take care of some adulting. Closing bank accounts and getting some paperwork notarized. That's about it for my day. Probably need to swing through the market for dinner stuff.

OH! After a terrible work week, I ended on a big up note yesterday by recapturing a contract that we had lost due to change in ownership of the customer account. It is worth around 60K a month in business, so it's a huge win back for our company. Yay for us.

Menu is honestly -- I don't know.

I never heard of cornbread with cranberry, but now I want some. That looks so delicious.

Mary,

super easy to make. But, I think because of the fresh cranberries it went bad fast. So the next time I make it, and I will, I am going to cut it into small slices once it cools, wrap individually and freeze. The burst of the fresh cranberries with the bites of cornbread was delicious!

Oh -- And I would add another cup of cranberries next time. Even though I sprinkled them around the wet batter, they seems to migrate towards the middle so more would give me better coverage I think!

I learned on the GBBO that if you put fruit in something to bake, you should toss it with flour first...since it's cornbread maybe toss it with a bit of the corn meal?

When I make blueberry muffins or pancakes, I toss the fruit in flour, and it does work much better. Good reminder Jen. I am going to make that cornbread. I remember my mother baking cornbread in the iron skillet, and it was so crispy of the outside. I would not have thought about coating the cranberries, but I will do that now.
